ISO Butternut Squash Soup recipe

Does anyone have a core (or close to core) recipe for this? I had some butternut squash bisque soup today that was outstanding, and I'd like to make my own. Thanks in advance!

I haven't done "Core," so I'm not sure what to look for, but I just found two recipes that look great. If you go to www.skinnytaste.com you can find Butternut Squash Soup with Sage and Coconut Curry Butternut Squash Soup. You should be able to tell if they are core by looking at the ingredients. I made a batch of curry butternut squash soup a week ago (my own recipe that I will probably never be able to duplicate) and ate it for about five days in a row. When I couldn't imagine eating another bowl, I added a little flour to thicken it, then added mushrooms and shrimp to make a sauce for whole wheat pasta (that's probably now core, is it).

I have a couple of different ones ...

 

Butternut Squash Soup

2 tsp olive oil

4 cups butternut squash, peeled and cubed

3 cups chicken stock

1 large carrot, chopped

1 large onion, chopped

2 or 3 cloves garlic, crushed

1 Tbs chopped fresh ginger, or 1 tsp dried

salt

pepper

curry powder

nutmeg

1. Sauté onion in olive oil, 15 minutes

2. Add half broth, squash, carrot, simmer 15 minutes

3. Add rest of broth, spices, simmer 30 minutes

4. Puree in batches, adjust seasonings

5. Serve with dollop of yogurt or sour cream

Servings: 8

This is my basic butternut squash soup recipe

 

 

You can pretty much use this same method for any recipe and any squash... saute the garlic and onions, add the spices, the broth and the sqash. I like a mix of any red squash with sweet potato and carrot.

p.s. I like to add a 'dollop' of ff yogurt or ff sour cream to my bowl of soup before serving.. makes it pretty to serve and delicious when swirled into the soup!
