What to do with leftover Avocado?

I love avocado and putting a few slices on my sandwich or salad at lunch. I know it's super healthy, but it's point heavy and I won't eat the whole avocado. The leftovers turn brown so darn fast. Can I keep it from turing brown or use it some other way? I hate to waste it.

If you leave the part you don't eat in the skin and cover it, then most of it will keep OK in the fridge and just the exposed part will turn brown and you can easily scrape that off.

 

I've heard that lemon or lime juice helps it not turn brown but I haven't had much luck with that. I think the best idea is to leave the peelings on the unused part. I LOVE avacados...wish they weren't so high in points! icon10.png

I was just told the other day that storing the pit with the leftover avocado helps the green to stay green.

 

Buuuut...I don't really know. I stored a half of an avocado that still have the pit in it, and it STILL turned brown. I'd say try the lemon/lime juice thing and/or just scrape off the brown stuff. I still eat bananas with bruises, and I eat apples that have oxidated after being sliced as well.

Leaving the skin on the unused part really helps. I use lots of lemon/lime juice and then cover it with plastic wrap very close to the skin and try not to let any air in. It still gets a little brown, but it's minimized. I love avacado too, and could eat them everyday...

Unfortunately, it's likely to turn brown unless you get ALL the air out of whatever you store it in, even with lemon juice.

I suggest you try removing the skin and the pit and squish all the goo into the bottom of a zip lock baggie, then flatten it as much as possible to fully squeeze out ALL the air before you seal it (VIP).

When you want to use it (within the next 2 days), just turn the zip lock baggie inside out so you can scrape off ALL the good stuff.

Ditto on the guacamole!! You can "dilute" the high point count of the avocado with lots of tomatoes & onions & parsley/cilantro - I add black beans for fiber and protein. yum - it's making me hungry!

Eat it tomorrow. It's just the color. I keep it in the skin and seal it tight in an airtight sandwich bag. The brown tastes just fine.

avocado freezes well for guac later. Just toss it in a freezer bag. when you thaw it, just sqush it up in the bag then add your other seasonings, lime, cilantro, peppers, onion, whatever. tastes great. I use lots of veggies in mine so I can have a bigger portion.

I had no idea you could freeze it!

avocado freezes well for guac later. Just toss it in a freezer bag. when you thaw it, just sqush it up in the bag then add your other seasonings, lime, cilantro, peppers, onion, whatever. tastes great. I use lots of veggies in mine so I can have a bigger portion.
