Chicken & Broccoli Slaw Stir-Fry

My wife makes this for me at times for dinner - and it’s one of my favorites! It tastes great, is filling, and is super healthy for you. And, if you already have the chicken cooked, it’s something that can be made quickly.




1 bag broccoli slaw

1/2 cup edamame

1/2 cup shredded carrots

1 can sliced water chestnuts (or 1/2 cup jicama julienned)

9 ounces cooked chicken white meat without skin cut into bit-size pieces

1 tbsp toasted sesame oil

1/8 cup mirin (rice cooking wine)

1 tbsp miso (dark)


How to make it:

  • Heat pan or wok to high.
  • Add sesame oil to coat.
  • Put broccoli slaw and carrots into pan. Sauté for 1-2 minutes.
  • Add edamame and water chestnuts. Sauté for approximately 3 minutes.
  • Add mirin and miso – mix into contents. (If miso is too thick, add a bit more mirin to thin out and make a sauce.)
  • Add cooked chicken until heated.
