Muffins of all flavors ( they are great!!)

Just Plain Muffins

 

1-cup skim milk

1 egg

1 tablespoon + 1 teaspoon stick margarine, melted

1/2 teaspoon butter flavoring

1 3/4 cups all-purpose flour

1 tablespoon + 1 teaspoon granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

nonstick cooking spray

 

1) Preheat oven to 400 degrees. Spray a 12-muffin (2 inch) tin

with nonstick cooking spray.

 

2) In small bowl, combine milk, egg, margarine and butter

flavoring. In larger bowl, combine the flour, sugar, baking

powder and salt.

 

3) Add milk mixture to flour mixture, and stir just until flour

disappears; do not overblend. Spoon into muffin tin and

bake 20-25 minutes, or until toothpick comes out clean and

muffins are golden brown. Cool on rack for 5 minutes;

remove from pan and serve hot.

Berry Muffins

 

Add 3/4 cup fresh blueberries or raspberries to flour mixture.

Sweet Muffins

 

Use same amount of dark brown sugar or maple sugar instead of

granulated.

Orange Muffins

 

Substitute 1/2 cup skim milk,1/2 cup fresh orange juice (milk will

curdle) and 2 teaspoons orange zest for skim milk in basic recipe.

12 servings ..2 points

 

Lemon Muffins

 

Substitute 3/4 cup + 2 tablespoons skim milk, 2 tablespoons lemon

juice (milk will curdle) and 2 teaspoons lemon zest for skim milk

in basic recipe.

 

12 servings ..2 points

 

Pineapple Muffins

 

Add 1/2 cup well-drained crushed pineapple to milk mixture.

 

12 servings 2 points

 

Chocolate Muffins

Use 2 tablespoons unsweetened cocoa powder and 1 1/2 cups flour,

and increase sugar to 2 tablespoons + 2 teaspoons. Add 1-

teaspoon vanilla extract to liquid. Dust with 1-teaspoon

confectioners sugar when slightly cooled.

I love muffins too!!! No matter if they are part of my bfast or one of my snacks but I simply cannot live without them!!!

 

I pretty much like the ones using Fibre1 cereal and wonder if anyone has heard of a 1pt recipe using Fibre1 cereal...

 

I have found this recipe but I think it is old and now for the winning points it would be more like 2pts each...

 

Here is the recipe:

Pumpkin Bran Muffins

1 Point Per Muffin

 

2 c All Bran or Fiber One cereal

1 c. skim milk

3/4 c. pumpkin

2 tsp pumpkin pie spice (I used 2 tsp cinn, 1 tsp ginger, 1/2 tsp cloves -- spicier that way!)

1 egg

1/2 c. br. sugar

1 1/4 c. flour

1 Tb bkg pdr

1 tsp salt (optional)

 

Mix cereal & milk & let rest 5 min. Add pumpkin, egg, spices and br. sugar. Mix together flour, salt, bkg pdr & add to pumpkin mixture.

 

Bake @ 350º 23-25 min or until toothpick inserted in center comes out clean.

 

Makes 12 muffins.

Hello i'm glad my recipes can help others on weight watcher like they have done me going on 4 yrs on weight watcher plan ;) . Keep a look on all the recipes i post ever where here. :D

Yummy......this sounds soooo good.

 

But, what if you can't get butter flavouring? The UK has no such product. If I use real butter I would just add more pts. Do you know?

It's only 1/2 a teaspoon, so I don't think it'd make any difference whatsoever, Chattie. And even 1/2 tsp. of real butter is 1/2 point divided in the whole recipe, which is no big whoop.
