chinese beef with broccoli 4 points

3 c broccoli florets

1 medium red bell pepper diced

1 T minced pared fresh ginger root

2 t peanut oil

1 clove garlic minced

2 c cooked lean beef round strips

2 T reduced sodium soy sauce

1 T balsamic vinegar

1 T rice vinegar

2 t oriental sesame oil

2 medium scallions sliced


in a large nonstick skillet over medium heat combine broccoli and 1/2 c water. cook, covered, 4 minutes until tender crisp.


add pepper, ginger peanut oil, and garlic; cook, stirring frequently, 2 minutes. stir in beef, soy sauce, balsamic and rice vinegars and sesame oil;cook stirring frequently 4 minutes until sauce is slightly thickened. sprinkle with scallions.
