Pizza-Style Meatloaf ~ 7 Points

This was on the "menu" for DH and I last night and it was really easy to make, and very tasty! I thought that rolling a meatloaf would be hard, but it was simple!! ;)

 

Pizza-Style Meatloaf

Servings: 6

Points per Serving: 7

 

Ingredients:

2/3 cup pizza sauce, divided

1 1/2 lbs. extra-lean ground round

3/4 cup italian-seasoned breadcrumbs

1/2 cup chopped onion

1 tsp. worcestershire sauce

1/2 tsp. ground red pepper

1/4 tsp. salt

1/4 tsp. black pepper

1 large egg white

2 1-0z. slices part-skim mozzarella cheese

1/2 cup diced red bell pepper

cooking spray

 

Combine 1/3 cup pizza sauce and next 8 ingredients (sauce through egg white) in a large bowl. Shape meat mixture into an 18" x 12" rectangle on wax paper. Arrange cheese slices over meat mixture; sprinkel with red bell pepper, leaving a 1" border. Roll meat mixture up jelly-roll fashion staring at short side. Pinch ends to seal.

 

Place meat loaf on a broiler pan coated with cooking spray. Bake at 350 for one hour or until meat loaf registers 160. Brush 1/3 cup pizza sauce over meat loaf. Bak an additional 5 minutes or until done; let stand 10 minutes before slicing.

Wow! The first recipe was exactly what I was looking for smile.gif Meatloaf that uses 1.5 pounds of ground beef. I know what we are having for dinner Saturday night. Thanks Christine!
