"Turkey Loaf"

We don't eat ground beef anymore... but I came acorss this recipe & made it SUnday ... Even my picky, picky picky daughters ate! ( of course I told them it was chicken I cut up into cubes..)

 

My husband would never eat ground beef meatloaf but he really liked this one...

 

Ok, enough.. here's the recipe...

 

Turkey Loaf:

 

1 small onion , chopped *********

1 # extra lean ground turkey ****

2 egg whites

1/2 - 1 tsp Italian seasoning****

1/4 tsp crushed red pepper (opt)

1/2 c unsweetened applesauce

1/2 tsp salt ( may omit)

1/2 c dry seasoned bread crumbs ****

2 T grated parmesan cheese

1 c spaghetti sauce ****

 

***** my changes to above*****

I used 2 T onion flakes instead of "real" onion

I used parsley instead of italian seasoning

left out the red pepper

Added the salt, I make my own breadcrumbs from homemade bread...a 2pt slice of bread makes 1/2 c crumbs....

Instead of spaghetti sauce, I used an 8oz can of tomato sauce...

 

Combine all ingredients EXCEPT tom/spagh sauce & mix well.

Shape into a loaf. Place in a square baking dish sprayed w/non stick spray..

 

Top w/sauce... Bake in preheated oven set @ 350 for 75 minutes.

 

Serves 4, 2 slices per person... ( i actually got 10 slices from my loaf)

 

I figured the points to equal 5 for 2 slices...

o for onion flakes

15 f/the turkey breast ( based on label for the 1.25 # pkg)

1 for applesauce, 0 for eggwhites, 2 for breadcrumbs, 1 for cheese ( based on label) 1 for the can of sauce..
