Cheese Soup - 1 pt per cup

I am planning preparing this soup over the weekend.

 

 

I am wondering if it is high in sodium..does anyone know?:confused:

Could you sub frozen mixed vegies (carrots, peas, potatoes). I am not much on califlower and broccoli? Thanks.

I made this soup last night and it is GREAT!!! Reminds me of nacho cheese soup with the cheese and spicy tomatoes. This is definately a keeper in my recipe collection.

Made this yesterday for lunch and it was very good. I only used brocilli because that was all I had. I bought more veggies today, cann't wait to try them.

Finally made this today. Mmmm... so tasty! I puree'd the veggies in mine, so I could get DH to eat it, and he is a fan of it too!

 

Definately a new staple in my house!

Hi Everyone,

 

I have searched high and low for "light" velveeta.. Any suggestions? I'm in Southern California. I even went on their website to see if I could order it online!

 

I have all the ingredients, but the cheese and I'm anxious to make. I guess if I had to make it with reg. velveeta I could. Anybody know how the points would change?

I couldn't find light velvetta either, but I did find a velveeta made with 2% milk that keeps the recipe at 1 pt/cup. So maybe try that velveeta. It's still better than the regular stuff! I'm making this soup this weekend :)

yeah they don't sell light around here. all they have is 2% velveta. but i did make this soup today and omg it was delish! it's going in the repeat file :)

I just checked kraft's website and velveeta light is no longer listed as a product. Velveeta 2% is the new light. I am not sure if it is the same product or not or if the nutritionals are the same. If anyone has a box of the light could you check and compare the nutritionals to the 2% ones?

I have made this Cheesey Broccoli Soup for several years. I found it on BB board a while ago. It is really, really good. However, I did not put in any tomatoes.

I used the chicken broth, 2 bags of broccoli, 1 bag of cauliflower, 1 bag of carrots and 12 ounces of lite velveeta. When all veggies are soft, I put them in the blender and make a smooth, thick broth. Yummy!

It is time to make it again.

I made this last night and it is delicious and I can't believe only one pt! It is a little spicy for my liking (with the tomatoes and green chiles). Next time I will just do plain tomatoes or maybe just skip them. Dh and ds did not like so now I have a whole pot of leftovers for the week!


I wake up every day with the realization that this is it, that there's only one shot at this life and I can either enjoy the ride and live it to its fullest and to my highest potential or I can stay the way I am.

This is probably the best recipe I've tried yet! I made it with a southwest flair. I added 1/2 cup of copped cilantro. Also some frozen red bell peppers and beans (I picked them out of a bag of oriental veggies I had on hand). I also thickened it with 2 TBL of cornstarch that someone suggested) and added about a cup of walmart brand Black Bean and white corn salsa to it. I am addicted to this soup. I guess Kraft has renamed Light velveeta-- now it's called 2% but the ingredients compare the same I believe. Going to the store to get stuff to make another big batch. Think I'll take to WW meeting thurs.
