My Leader, Nancy's Vegetable Soup W/ Bacon- 1/2 Pt. C.

The ONE piece of bacon *makes* this soup! (in my opinion... )

 

Nancy's Vegetable Soup

 

2 tsp. olive oil

1 1/2 cups mushrooms, sliced

2 cups green beans, cut

1/2 large onion, chopped

1 cup carrots, coined

3/4 cup celery, sliced

1 slice bacon (buy 1 at deli counter, or freeze individually)

1 garlic clove, minced

1 tsp. Herbs of Provence or Herbs Fines Blend

1 bay leaf

2 cans 40%-less-sodium FF chicken broth (29 oz. total)

1 28 oz. can chopped tomatoes

2 cups cabbage, sliced, or slaw mix

1 1/2 cups sweet corn, fresh or frozen

1 tsp. Balsamic vinegar

1 tsp. Worcestershire sauce

1/4 tsp. Tabasco sauce

fresh ground pepper, to taste

1 tsp. sugar, honey, or Splenda

2 cups spinach, washed and chopped

 

Dice bacon slice and fry til browned in large pot. Add olive oil. Saute' all ingredients through herbs, til fragrant and onions are glossy; stir at med. heat.

 

Add chicken broth, tomatoes and juice.

 

Add remaining ingredients, except spinach. Simmer until green beans are crisp and tender, about 20 minutes with lid on. Stir in spinach before serving. Makes 8-9 servings. About 1/2 pt. per cup. [Edit: Or less. Count your bacon slice and divide by the number of cups you get.]

 

To make this soup a main meal add: 1/2 chopped baked potato, or parmesean, or 1/2 cup cooked pasta, or cooked beans. Points will depend upon amounts/ingredients.

 

My leader suggests that you *discard* the piece of bacon. I mince mine so that you *eat* it, instead! You can choose. Good. Or evil. LOL! Carol

This looks really Yummy! with cold weather just around the corner soup is starting to sound good again and this looks great!

Carol,

 

Sounds yummy...can't wait to try it. I'm wondering...if someone doesn't want to use regular bacon, could you substitute a slice or two of Canadian bacon? It would have less grease but would give still give the soup some additional flavor.

It's worth a try, Roz!! :D I think it would be wonderful...!

 

Char uses smoked turkey legs with her beans instead of the traditional meaty hambone, because of the fatty-factor!

This soup is :D :D :D !!!

 

I used a Gwaltney's 40% reduced fat bacon strip and skipped the corn and other pointy items, so this really is 0 point YUMMY YUMMY soup! I love the tomato-y base it has, as I also used the juice from my whole tomatoes that I chopped. WOW!

Just wondering if "Liquid Smoke" could be used for the same bacon kick?? It sure adds the yummy smokehouse flavor to my homemade bbq sauce and baked beans!
