nancyny 0 Posted January 5, 2003 Here's my personal variation of 0-pt. soup. I am not a big fan of cooked cabbage so I made up my own. I freeze it in 1-c. containers for easy reheating.  * Exported from MasterCook *  Tomato-Vegetable Soup  Recipe By : nancyny (3/98) Servings : 14  Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Dash vegetable cooking spray 1 Cup diced onion 3 Cloves pressed garlic 2 Cups sliced celery 28 Ounces diced tomatoes -- (lg. can) 49 Ounces fat-free chicken broth -- (lg. can) 6 Ounces tomato paste -- (sm. can) 2 1/2 Cups frozen green beans 2 1/2 Cups frozen carrot slices 1 Teaspoon basil 1/2 Teaspoon oregano 1/2 Teaspoon tarragon 1/2 Teaspoon salt  Spray pan with veg. cooking spray. Saute garlic & onion until hot. Add celery and cook, stirring often, until onion is soft (10 min. or so). Add tomatoes (including liquid), tomato paste, chicken broth, and herbs. Cook 15-20 min. Add green beans and carrots and cook until vegetables are hot.  Serving size: 1 cup  - - - - - - - - - - - - - - - - - - -  Per Serving (excluding unknown items): 54 Calories; trace Fat (5.3% calories from fat); 6g Protein; 11g Carbohydrate; 3g Dietary Fiber; 0mg Cholesterol; 412mg Sodium. Exchanges: 0 Grain(Starch); 1/2 Lean Meat; 2 Vegetable; 0 Fat.  NOTES : Makes almost 4 quarts. Use 4-qt. or larger saucepan!  For Weight watchers: ZERO POINTS  Many variations: add canned mushrooms with liquids, or fresh mushrooms with celery. Use other veggies (some don't freeze or reheat well) or vary seasonings. Vegetarians should use vegetable broth instead of chicken broth.  This freezes and reheats well. It's best if chilled for 24 hours and reheated before serving (allows flavors to blend). Anyway, I would never make some of the other WW zero point soups because they have too many vegetables that I hate in them (i.e. cabbage). This soup I can handle. I'm going to make it soon. nancyny 0 Posted January 17, 2004 Canned green beans would work fine if that's what you prefer. If you add the liquid, you might want to leave out the salt in the recipe and adjust later to your taste.  Also you can put in tomatoes in any size lump you want. Diced, crushed, I've even seen a variety that's lumpier than "crushed" but not diced.  I hope you like it! nancyny 0 Posted October 3, 2005 You can put in whatever you want, but some high sugar or starchy veggies such as peas and lima beans and corn would count for Points.  For this soup I picked 0-pt. veggies that freeze and reheat well; I don't put zucchini on that list. It's best fresh. But it's based on the original Garden Vegetable Soup (subbing tomatoes for cabbage) and that soup has zucchini.  These soups are made to be modified!
