Taco Soup

1 lb of lean ground beef or ground turkey

1 can of whole corn

1 can of pinto beans

1 can of chilli beans(without meat)

1 yellow onion

1 pack of taco seasoning mix

1 pack of hidden valley ranch seasoning mix

1 can of mexican style can tomoatoes with green chilles

 

Brown Beef with onion and seasoning packets. Mix all other ingredients (do not drain) and let simmer for 45 minutes-1 hour.

An 80z serving is 2 points

Sounds like a great recipe!

 

Are you sure about the points though? I'm estimating about 10 cups of prepared soup and even using ground turkey come up with 3 points and that isn't accounting for the Hidden Valley Ranch mix as I don't have that info. Does it make more than 10 cups, or did you also add some water?

 

I may be calculating wrong, am new to Mastercook.

here it is with beef. I am guessing 12 sevings, 4 for the beef and 8 for the canned stuff=12 servings

I made this the other day. Very good. I varied it slightly...

 

I added 2 cans of black beans instead of 1 can of pintos. And I used a 12 oz pkg of TVP (equiv to 1 pound ground beef) in place of the beef.

 

Oh, and I added 3 cups of water. Made 10 1C servings at 3 points a piece. Even my husband liked it.

I'd like to lower the points more. What about 1/2lb of TVP, 1 can black beans and 1 can chili beans in sauce?

Wow this sounds great.I had a similar recipe but the points were too high.My family will love this, since they liked mine and ate it with chips, cheese, and salsa.Thanks for posting it. :D

This was so yummy! I used fat free refried beans in place of all the other beans (It's all I had). Try it its great. Thanks for posting this soup. wave.gif
