Eggplant Pesto


1 eggplant, sliced in 1/3 inch slices

1/2 cup Classico Spicy Tomato and Pesto sauce

2/3 cup fatfree mozz.cheese, shredded


preheat oven to 425 degrees

spray cookie sheet with nonstick spray (olive oil style best)

place eggplant slices on pan, spray tops lightly with olive oil spray

bake for about 10 minutes or until eggplant is golden brown on bottoms, then turn slices over

Top each slice with sauce and cheese.

Return to oven and bake until cheese is bubbly and turning golden brown.

Total points for entire dish is 3 points!
