Cheesy Spinach Pierogi Bake


12 potato Cheese Pierogis (Mrs. T's Brand)

1 medium onion chopped

1 teaspoon Italian seasoning

1/4 teaspoon ground black pepper

1 teaspoon finely chopped garlic

1 package (10 oz) frozen chopped spinach thawed

3 1/2 oz fat free mozzarella cheese

1 Tablespoon grated Parmesan cheese

1. Preheat oven to 350

2. Place Pierogis in a pot of hot tap water to thaw.

3. Spray a 3 quart casserole dish with butter spray, set aside

4. In a large pan, spray with Pam and saute onion, Italian seasoning, pepper and garlic. Stir in thawed spinach and continue cooking until spinach mixture is heated thru, about 2-4 minutes. Remove from heat. Add cheeses and blend well.

5. Place thawed Pierogis in casserole dish and top with spinach mixture. Spritz with butter spray.

6. Bake 15-20 minutes until heated thru.


Optional additions: Mushrooms, sundried tomatoes, fresh tomatoes

The total points for this is 16.

Serves 2 = 8 points (6 Pierogis)

Serves 3 = 5.5 points (4 Pierogis)
