RUN FOR THE BORDER MEAL

I have been trying all kinds of new recipes since I

started WW in March and I have to say that this was

the best meal yet! It is so filling and spicy (you can

make it less spicy)

 

CHEESY ENCHILADAS

 

1 package (8 oz) FF cream cheese, softened

1 package (8 oz) FF shredded cheddar cheese

1/4 C sliced green onions

6 flour tortillas (6 in)

1 C. Thick N Chunky salsa

 

Beat cream cheese with electric mixer on Med. speed

until smooth. Add 1 C of cheddar cheese and onions,

mixing until blended.

 

Spread 1/4 C cream cheese mixture down center, roll

and place seam side down in 11 x 7 in. baking dish.

 

Pour salsa over tortillas. Sprinkle with remaining

cheese, Cover.

 

Bake at 350 degrees for 25 min or until thoroughly

heated.

 

Serves 6, 4 points each

 

 

FIESTA RICE

 

1 C Salsa

3/4 C Minute Rice

1/2 C Water

 

Mix salsa, rice and water in sauce pan, bring to a

boil. Reduce heat and simmer 5-10 min until rice is

tender. Fluff with fork.

 

Serves 4, 1.5 points each

 

PINTOS AND CHEESE

 

1 Can spicy FF Refried Beans (El Paso)

1/4 C Enchilada Sauce (El Paso)

1/2 C FF shredded Cheddar Cheese

 

In small baking dish layer, beans first, enchilada

sauce, and top with cheese. Cover, Bake 350 degrees

for 25 min.

 

Serves 4, 2 points each

 

And if you still need dessert after this!

 

Take a tortilla, flip on a hot skillet until warm.

Spray with "I can't believe it's not butter spray" and

sprinkle with a mixture of Splenda and cinnamon.

Roll up and Enjoy!
