Zucchini Pie Ole'

Amount Measure Ingredient -- Preparation Method

2 cups shredded zucchini

1 cup shredded lowfat cheddar cheese -- Sargento Light Mexican Blend

1/2 cup diced onion

1 1/2 cups 1% milk

1/2 cup Egg Beaters® 99% egg substitute

1 egg

3/4 cup reduced fat Bisquick®

1 teaspoon olive oil

1 teaspoon Adobo criollo seasoning


Grease 10" pie dish with Olive Oil. Mix zucchini and onion and cheese and place in pie dish. Take remainder of ingredients and place in blender, blend till smooth. Pour over veggie and cheese mixture. Bake in 400 degree oven for 40-45 minutes or until nicely browned.

I have everything for this except the Adobo spice, but I think I know where I can find it.


I will let you know how we all liked it. I will probably make this next weekend.
