Chunky Tofu Guacamole - 1 Point

Here is a recipe from the Weight Watchers Annual Recipes for Success 2001.

I have to add for this one... who are they kidding with the 1/4 cup serving size - I could eat at least a cup in only a few bites!!





12 servings (1/4 cup)

1 point per serving


1 medium avocado

1 (12.3oz) package firm silken-style tofu (such as Mori-Nu), drained

1 (7oz) can salsa verde (such as Herdez) or 3/4 cup other tomatillo salsa

2 garlic cloves, peeled

2 tablespoons fresh lemon juice

1/2 teaspoon salt

1¼ cups diced seeded tomato (about 1 medium)

1/2 cup finely diced red onion


1. Slice avocado in half. Scoop pulp from 1 half of avocado; set remaining half aside.

2. Place tofu, avocado pulp, salsa verde, and next three ingredients in a food processor; process until smooth, scraping down sides of bowl occasionally. Transfer to a medium bowl.

3. Dice remaining avocado. Add diced avocado, tomato, and onion to tofu mixture, stirring well.


Points: 1. Exchanges: 1/2 vegetable, 1/2 fat.

calories - 45

fat - 2 grams

fiber - 0.8 grams
