Skillet Rice & Beans

Heat 1 tsp. olive oil over med.-high heat. Add 1/2 cup EA. of chopped onion, red bell pepper, and green bell pepper. Saute. Add 1 cup Healthy Choice pasta sauce, 1/4 cup EA. of drained red kidney beans, and black beans, and 1/2 tsp. dried basil. Stir in 1 cup cooked rice. Cook until heated.

 

serves 2 // 4 points ea.

This sounds wonderful! It is printing out as I type. I am going to make it this weekend - my vegan son is coming home from college and I think he will like this very much, as will I! Thanks!
