From Weight Watcher's Favorite Recipes: WW Carol says "4 Stars!"

 

Tofu-Tamale Pie

 

1 TBS. plus 1 tsp. vegetable oil (or, olive oil)

1 C. chopped onions

2 C. sliced zucchini (3 small)

1 C. sliced mushrooms

12 oz. firm-style tofu, small diced (rinse, then press out liquid before "dicing" in an egg-slicer, north/south, then east/west for uniform teeny-tiny pieces)

3 C. canned crushed tomatoes (I used one can of small dice and one can of "fire-roasted" diced)

1 TBS. chili powder

1/2 tsp. salt

1/4 tsp. pepper

16 pitted black olives, sliced

1 C. drained whole-kernel corn (I use frozen)

1 1/2 oz. uncooked yellow or white cornmeal

4 oz. sharp Cheddar cheese, shredded (On CORE, I now use FF shredded cheddar cheese and it melts/browns/and tastes great! :D )

 

In 12" skillet that has an oven-safe or removable handle heat oil over med.-high heat; add onions and saute' until translucent. Add zucchini and mushrooms and saute 5 minutes; add tofu, tomatoes, chili powder, salt, and pepper. Reduce heat and let simmer 15 minutes.

 

Preheat oven to 400 degrees. Stir olives, corn, and cornmeal into tofu mixture and cook, stirring frequently, until mixture thickens, 5-10 minutes. Sprinkle with cheese, transfer to oven, and bake until cheese is melted, about 5 minutes. Let stand 5 minutes before serving.

 

Makes 4 large servings.

 

Calories, 383, Fat, 22 g., Fiber, guessing I'd say 4+. 9 points per serving by my calculations.

Carol: Your oil is 14 grams of fat per tablespoon, and you have 1T + 1t. = 19grams. The black olives are high in fat, and there's 4 oz. of regular cheddar cheese in this recipe. I would say there's the culprits. Otherwise, I would say it's ok, but those are high-fat items that you've included.

I learned to love this years ago...I'm sure now I'd use a 2% cheddar...still need those olives, though!! Carol

I made this a couple weeks ago and LOVED it! I just made it again for this week but left out the olives just cause I didn't have any. I used chipotle infused canola oil and chipotle chile powder, light tofu and extra mushrooms. This is a keeper!

 

Carol, Have you ever tried freezing this? It's HUGE and DH won't even consider it. I'm going to try freezing one serving this week and see how it comes out next week.

Joanne, how did it work frozen? I have the same problem with DB & tofu
