apple-stuffed acorn squash

this strikes me as a really good fall or thanksgiving recipe. it's very yummy, and i counted one half as 5.5 points. enjoy! wave.gif


1 acorn squash

1 tbs. light syrup

1 large tart red apple, chopped

2 tbs. chopped nuts

2 tbs. packed brown sugar

1 tbs. margarine, melted


heat oven to 350. cut squash lengthwise in half; remove seeds and fibers. place squash cut sides up, in ungreased pan. spoon 1 tbs. syrup into each half. bake 30 minutes.


combine apple, nuts, brown sugar and margarine in a bowl. spoon mixture into squash halves. bake about 30 minutes longer or until tender.

the points probably vary because of what kind of syrup, margarine (i used i can't believe it's not butter light), and nuts you use.


still, even at 7 points, it's worth it. very filling and delicious!
