Vegetarian Stuffed Peppers

4 red bell peppers, halved & seeded

2 teaspoons olive oil

1 onion, chopped

2 garlic cloves, minced

One 14 1/2 ounce can diced tomatoes

Half 10-ounnce box frozen corn kernels,thawed

1/2 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon freshly ground pepper

1 cup cooked orzo

4 teaspoons grated Parmesan cheese


Preheat oven to 375. In large pot of boiling water, oook the bell peppers until tender, about 4 minutes; drain.


To prepare the filling, in a large nonstick skillet, heat the oil. Saute the onion & garlic until softened, about 5 minutes. Stir in the tomatoes, corn, chili powder, salt & pepper; bring to a boil. Reduce the heat and simmer, stirring as needed, until the flavors are blended, about 10 minutes. Stir in orzo.


Stuff the filling into each pepper half; place the stuffed peppers in a shallow 2 quart casserole and sprinkle with the cheese. Cover with foil and bake until heated through, 20-25 minutes.


Serves 4

Per Serving: 182 Calories, 4 g Total Fat, 8 g Fiber; POINTS per serving 2
