I tried a new recipe tonight that called for cubed tofu. I sprinkled the cubes with some spices and corn starch and then sauteed them in a small amount of olive oil. The cornstarch gave them the coating the BEST texture! I usually don't give it a "crust", but I will always use the cornstarch as the basis of my tofu satueeing extravaganza from now on!!!

Here is a recipe for a single serving of the

 

"Western Sandwich"

 

cube 1/5 of the tofu (save rest) and sprinkle with mixture of 1 tsp cumin, 1 tsp chili powder, 1 tsp corn starch, 1/4 tsp salt. saute' cubes in olive oil until crispy. assemble sandwich as follows:

 

1 thick slice of sourdough bread

topped with 1 cup of baked beans

topped with sauteed onions to taste

topped with tofu cubes

topped with shredded cheese (i used soy)

 

broil until cheese melts

This sounds yummy. I am a novice when it comes to tofu. I've only used silken tofu in a smoothy and I was very happy with the results.

 

Do you have the pts for this recipe?

You know, the points depend on the type of tofu you use, and the type of baked beans. I used

 

light tofu 2 pts

bk beans 4 pts

bread 2 pts

soy cheese 2 pts

 

It was HUGE and I couldn't eat it all.

P.C.

 

Sorry for all the questions, but I am assuming you need to use firm or extra firm tofu for a sandwich. I use the silken tofu for my smoothies but there is no way to cube that ;)
