Barbecue Turkey & Beans

2 lbs bone-in skinless turkey thighs

1 (28 oz) can baked beans

1 1/2 cups chopped onions

1 cup barbecue sauce

1 tablespoon spicy brown or other mustard

1 teaspoon each cumin & salt

 

Place turkey in 4 qt or larger slow cooker. Separately, combine beans, onions, sauce, mustard, cumin & salt; mix well. Pour over turkey. Cook 8 hours on low or 5 to 6 hours on high. Remove turkey & shred with 2 forks. Discard bones. Return meat to cooker, mix well & serve.

 

Makes 12 servings at 3 pts each. 161 cal, 4 g fat, 4 g fiber

Can you substitute a whole turkey a breast or some boneless turkey tenderloins for the thighs?

 

I dont really care for the dark meat of the turkey

 

If you can how long would you cook it? help.gif

I'm sure you could substitute. If going boneless, I'd probably use closer to 1 1/2 lbs of meat though since the bones in the thighs would add to the weight in the orignal recipe. For a breast or whole turkey, I'd probably cook it the same, but for boneless pieces, I'd probably reduce the time a little (maybe check it at an hour less). Just guesses here....

I made this the other day and it was delicious! I actually used a boneless/skinless turkey breast and it still turned out surprisingly moist. Next time I might decrease the amount of turkey (I used 1.5lbs.) and add a can of navy beans to the mix to lower the points.


Weight loss to date: -78lbs.<br />Pounds to go: 35!
