I found this recipe somewhere on here or on the WW site. I believe that they said it was 1 or 2 points per cup...could someone verify that for me.

 

Taco Junk

 

16 oz. very lean ground beef

16 oz. whole corn, drained

16 oz. pinto beans, drained

16 oz. mex. stewed tomatoes

1 package taco seasoning

1 package FF ranch dry dressing mix

 

fry hamburger, drain and rinse. Add everything to the crockpot and cook on low all day.

 

I had this for a cookout last week, as a dip for chips. Everyone loved this, had it on hotdogs, with chips, just as a sloppy joe on a bun. Everyone wanted the recipe...but I need to know the points. Thanks

I "guesstimated" 2 points per cup based upon 8-10 servings. :D

Ran this thru the recipe builder on weightwatchers.com.... used 8 servings and it came out to be

 

:eek: 5 POINTS / SERVING ugh.gif

 

Still not too bad for a main meal, but.... 2 points sure sounded a lot better...

I subbed in 1 cup TVP for the ground beef and got it down to 2 pts per serving based on 8 servings per recipe. :D

I ran this through the WW site Recipe Builder using a serving of 12 and came out with 3 pt. That would still be a lot to eat, especially served with Chips etc.

Here's my very carefully calculated (points wise) take on Turkey Taco Junk - - and brand names given where possible:

Cherie's Turkey Taco Junk

 

Recipe By :Recipe by Cherie (HersheyBars@aol.com)

Serving Size : 12

Preparation Time : 6 hours in slow cooker

 

Ingredients:

1 lb. *ground turkey -- Jennie-O -- cooked

*(Carefully drain off fat w/ spoon as it cooks...)

2 cups pinto beans (measure after cooking)

1 can NS corn niblets -- Green Giant (11 oz)

2 cans NS stewed tomatoes -- Shoprite (14 oz ea.)

1 can peeled tomatoes -- Rienzi (28 oz)

1 cup salsa -- Shoprite

2 large onions -- chopped

1 packet Taco Seasoning Mix -- McCormick

1/4 cup Buttermilk Ranch mix -- Tone's (optional)

 

NOTE: TONE's seasonings and McCormick Taco Seasoning Mix packets (6 to a box) are sold at SAM's. Of course, you can use other brands of seasonings or ground turkey, but you may have to adjust the sodium content and/or points per serving.)

 

Preparation:

1. Add all ingredients to crock pot, mixing thoroughly.

2. Cook on HIGH 1 hour, then cook on LOW 5 hours.

 

Yield: 12 servings

Serving Size = 1 cup

1 cup = 3 points (Winning Points)

Without Tone's Buttermilk Ranch dressing mix:

412 mg sodium per cup

With Tone's Buttermilk Ranch mix:

592 mg sodium per cup

I saw this on Aimee's website (another WW recipe site) and it says serves 16.

 

Serves: 16

(1/2 Cup)

Calories: 115

Fat: 3

Fiber: 2.5

~2~

 

Taco Junk

 

1 Pound Lois Rich Pure Ground Turkey, cooked, rinsed and drained

1 (11 oz.) Cans Whole Kernel Corn, drained and rinsed

1 (15.5 oz.) Can Great Northern Beans, drained and rinsed

2 (.4 oz.) Packages Ranch Salad Dressing (Dry Mix)

1 (10 oz) Can Rotel Diced Tomatoes and Green Chilies

1 (16 oz.) Jar Salsa (hot, medium, or mild)

 

Mix all ingredients together.

Place in crockpot and cook on high for 4 hours.

 

Note: You can server this with baked chips, in a taco salad, etc. I put it on baked tostada shells with fat free refried beans, lettuce, onion, and fat free sour cream. It was very good. smile.gif

This recipe sounds similar to the one I received at my WW Meeting..

My Leader called it Taco Soup..

 

Taco Soup

2 pts per 1 cup serving.

 

1 lb lean ground beef browned with onion.

1 can Whole Kernel Corn.

1 can Ro-tel

1 can Diced Tomatoes

1 can Bush's Chili Beans.

1 can Bush's Black Beans.

1 pkg Taco Seasoning Mix. (I use McCormick's)

1 pkg Buttermilk Salad Dressing Mix.

 

Combine all ingredients. Cook at least 30 minutes to

allow flavors to blend. This is delicious and very

filling.
