0=P Zucchini Casserole

Hi everyone, This is something new I made that DH thinks is pretty darn good, and that's really saying something, because I have never seen him eat Zucchini anything before.

 

He thinks it's so good you could serve it over pasta instead of sauce.

 

This fab.recipe comes from a slowcooker group I belong to. It was posted there by "Kelloyd".

Zucchini Casserole

Serving Size : 8 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 large red onion* -- sliced

2 large orange or red or yellow or green peppers* -- cut up

4 medium zucchini* -- sliced, unpeeled

14 ounces Hunts canned toms.,basil,garlic & oregano -- diced toms.14.5 oz.can

freshly ground pepper, to taste*

1/2 teaspoon basil*

1 teaspoon Margarine,Promise Buttery Light, Tub

1/4 cup parmesan & Romano, grated,shaker cheese

 

Spray crock with pam.

Combine all ingreds. in crock except margarine & cheese.

Cook on low for 3 hours.

Dot with margarine & sprinkle with cheese.

Cook 1.5 hours more on low setting.

Note: Do not overcook or cook on high.

This does sound good, Dawna, and I agree that it might be good over pasta.

 

You could make it spicier by adding a jalepeno. (my dh loves spicy food)

You know...that's a LOT like my favorite: Ratatouille! Just minus the eggplant~

 

I also throw a roasted garlic clove in mine. Lotsa' pepper, some salt, and dribs and drabs of olive oil (instead of margarine).

 

I remember a Buddy saying she went to France and they had "ratatouille for breakfast, ratatouille for lunch, and ratatouille for dinner!"

 

Hot and cold! Served beside eggs, or over pasta...! (But I never thought of making it in my crockpot before~) Thanks, Dawna~

What if I made this, subbing eggplant for the zucchini and then serving it over.... Zoodles? With a piece of baguette rubbed with ICBINB spray and a garlic clove and then broiled, who needs Olive Garden!!!

If someone tries this with the eggplant, please let us know how it comes out. DH loves eggplant.

 

BTW, DH who has absolutely no creativity in the cooking dept., said he thought the possibilities were endless for all the different things you could use this for.

This sounds absolutely wonderful. I really need a 0 point "filler" as a side dish for my evening meals....that is absolutely my weakness is dinner time. Thanks alot!

OH my Goodness! This just sounds wonderful. I could easily just eat it for dinner alone! Thank you for the wonderful idea...I think I just might be getting me some zuc's tomorrow! Might throw in an eggplant too! Has anyone ever slowcooked eggplant?

Would you mind providing us with the name of your slow cooker group? I assume it is an online group. I LOVE slow cooking....it is wondering considering the fact that I have a 14 month old boy to chase around and a 7 year old daughter who needs constant attention with homework. That would be great. Thanks. Deb
