Crockpot Thai Chicken

I would love to try this but can anyone tell me a substitute for the salsa. Unfortunately I am allergic to tomatos.

Made this last night and loved it!!! I served over whole wheat brown rice. Great idea on the noodles, though.

Any ideas on how much dry pre-ground ginger I should sub?

I'm not much of a ginger fan.

Has anyone frozen this and reheated at a later time? Since I'm the only one in the house who will eat it (just my DD8 and I, and she doesn't like chicken), I love recipes I can portion and save for down the road. Then again, this sounds so good I may want to eat it meal after meal!

Sorry, I didn't like this at all. It tasted WONDERFUL right out of the slow cooker, very tasty & juicy. But I put it into individual sized servings (poured over Thai rice pasta) to eat later and once it cooled it thickened and just tasted icky. It was bone dry and I couldn't choke it down.

 

If I make this again I'll reduce the servings and make sure I eat it right from the slow cooker.

Made this yesterday for a family Birthday party with the following recipe:

 

2 lbs. Boneless, Skinless Chicken Breasts (I used frozen)

3/4 cup salsa

1/4 cup PB2

1 tsp. ginger

2 Tbsp. soy sauce

2 tsp. lime juice

2 tsp. cornstarch

2 tsp. minced garlic

Salt and Pepper to taste

 

Served it over whole wheat pasta. Everyone raved about this dish! The use of PB2 changes the point count to 1 pt. for 1/4 of the sauce. Make it - you will love it!

Sorry Lisa. I just noticed this question today.

 

Pb2 is a powdered peanut butter product that is made by a company called Bell Plantation. I order the stuff on-line. 2 Tblsps. are 1 point. You can use it in powder form (like in this recipe) or reconstitute it with water or oil. Hope that helps.
