Passover: Cocoa Chocolate Chip Pecan Softies 4 pts

 

I just made these and they are very good- a little high in points

for a cookie...maybe make them smaller or reduce the amount of

pecans and chocolate chips!!

Cocoa Chocolate Chip Pecan Softies (4 points)

1 1/2 cups chopped pecans

2 cups sugar

1/2 cup unsweetened cocoa

1/4 cup matzo cake meal

1/4 cup potato starch

5 large egg whites

3/4 cup pecans -- coarsely chopped

3/4 cup semisweet chocolate chips -- KP, pareve

 

1. Preheat oven to 400 degrees F. Line two cookie sheets with

parchment paper.

 

2. Combine the pecans, sugar, cocoa powder, matzo cake meal,

and potato starch in a food processor and pulse on and off until

the nuts are finely grated. Add the egg whites and pulse to blend.

 

3. Transfer the batter to a bowl and stir in the nuts and chocolate.

Let the batter sit for 10 minutes to thicken.

 

4. Drop the batter by well rounded teaspoonfuls (use regular

spoon, not measuring spoon) onto the parchment paper cookie

sheets leaving 1- inch between cookies.

 

5. Place one sheet on the middle and one sheet on the lower

shelf. Bake for 4 minutes. Switch the lower sheet to the top and

vice versa. Bake for 4 minutes more. The cookies should be dull,

but very soft. If not dull, bake for 1 more minute. Transfer the

parchment to a cooling rack, and let the cookies cool before

storing.

 

*For a low fat cookie (1 gram fat each) omit the chopped pecans

and chocolate chips. Bake the cookies 9 to 10 minutes.

 

Can be refrigerated for 2 days, frozen for 3 months

 

Makes 2- 1/2 dozen 2- 1/2 inch cookies
