Passover: Miniature Potato Knishes (1 point)

Miniature Potato Knishes (1 point)

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3 cups mashed potatoes

2 large eggs -- lightly beaten

2 tablespoons margarine

1 teaspoon salt

1/8 teaspoon pepper

1 medium onion -- diced

3/8 cup matzo meal

1 large egg yolk -- beaten w/ 1 T water

Vegetable cooking spray

 

OVEN: 400 degrees F

 

Coat a baking sheet with cooking spray.

 

Saute onion til browned.

 

In bowl, combine mashed potatoes with eggs, margarine, salt

pepper and matzo meal.

 

Add sauteed onion. Form into walnut-sized balls. Brush with

diluted egg yolk.

 

Bake for 20 minutes or til browned.

 

*1 point per knish

 

Been making these for years- very yummy!

Made these today from mashed potatoes leftover from Easter. I substituted EggBeaters for the 2 large eggs and did not use the yolk to brush them before baking. They came out delicious! Wonderful recipe for the holidays or anytime of the year. Thanks for posting.
