Best Holiday Sweet Potatoes

Servings: 21

Yield: 10 1/2 cups

Pts.= 2-3 (right on the line)

 

6 sm. cans sweet potatoes, mashed

1/2 cup skim milk

1/2 cup light butter

1/2 cup sugar substitute (or to taste)

1/4 cup Egg Beaters

1 tablespoon vanilla

1/4 cup sugar substitute

1/2 cup flour

1/3 cup light butter

1/2 cup nuts, chopped

 

1. Mix the first 6 ingredients and pour into a casserole.

 

2. Mix the remaining ingredients with a fork and sprinkle on top.

 

3. Bake uncovered at 350 for 25 min.

 

This is one of my families most favorite recipes. It wouldn't be a holiday without the sweet potatoes. Try it, I'm sure you'll like them.

 

Now, I have to tell you that I'm guessing at the yield, judging from the amount of ingredients in the recipe. I think it's pretty close, but I've never really measured out all of the potatoes because it's just not convenient once you have it in the casserole dish, and it's always for company, so I just never did that. Enjoy!

Cheree: I'm thinking about 16 oz. I know I just picked up 6 large cans of sw. pots. and they were like 29 oz. I've got a crowd that I'm cooking for, and they absolutely LOVE these potatoes! I have no problem sending leftovers home with them.

Hey I just found out that Cooking Light magazine has my recipe for sweet potatoes! Or do you think I have theirs? :rolleyes: Although that is not where I got this recipe from. I got mine from the Sweet Potatoe Growers Association of America! I never even knew they existed till I got this recipe! What a hoot! :D
