Laurdee 0 Posted May 11, 2001 This sounds like a lot of points, but don't forget, salmon itself it high in points, but so good for you! I made this last night, and it was delicious!  Lentils: 3 cups water 3/4 cup dried brown lentils 1/2 tsp salt, divided 1/2 tsp olive oil 1 cup chopped onion 1 cup chopped seeded tomato (I used canned diced tomatoes) 2-1/2 tbsp red wine vinegar 2 tbsp chopped fresh basil 1/4 tsp black pepper 2 garlic cloves, minced  Salmon: 2 tbsp all-purpose flour 1/4 tsp salt 1/4 tsp black pepper 1/4 tsp dried thyme 4 (6-ounce) salmon fillets (about 2 inches thick), skin removed 1 tsp olive oil  1. To prepare lentils, combine water, lentils, and 1/4 tsp salt in a medium saucepan. Bring to a boil; cover, reduce heat to medium-low, and simmer 20 minutes, Drain; set aside.  2. Heat 1/2 tsp oil in a large non-stick skillet over medium-high heat. Add onion; saute' 5 minutes or until lightly browned, Add lentils, 1/4 tsp salt, tomato, vinegar, basil, 1/4 tsp pepper, and garlic; toss gently.  3. To prepare salmon, combine flour, 1/4 tsp salt, 1/4 tsp pepper, and thyme. Sprinkle fillets with flour mixture. Heat 1 tsp oil in pan over medium-high hat. Add fillets, and saute' 6 minutes on each side or until fish flakes easily when tested with a fork.  4. Divide lentils evenly among 4 plates, and top each serving with a salmon fillet.  Yield: 4 servings (servings size: 3/4 cup lentils an 1 salmon fillet).
