Salmon Muffins

I got this recipe from a WW meeting. Everyone was talking about how good and easy this recipe was and thought I would share it will you.

 

1 can (4oz.)salmon or tuna drained

2 slices of WW bread

1 egg

3 tbsp. of chopped fine celery (1 stalk)

1 onion chopped fine

salt & pepper

 

Remove the skin for the salmon. Slice bread in cube size. Mix all the ingredients together.

 

Spray muffin tin with pam. Place salmon in muffin pan. Makes 3 muffins.

 

Bake at 350F for 30 minutes

 

3 points per muffin

have you tried this yet? doesn't sound too tempting to me. but then, canned salmon reminds me too much of cat food - so i never eat it. tuna may not be too bad.

 

WW bread??? Whole Wheat or Weight Watchers?

Yes I've tried it and it was very good. WW is weight watchers bread.

 

Don't knock it till you try it!

I think I'll try it, but maybe more onion and no celery. It sounds like a salmon croquetsp?. Thanks for the recipe. wave.gif
