  1. I have also been experimenting with salmon and have found that if you spread "creole mustard" on top then broil for about 5 minutes it is great! I have tried it with other mustards as well and so far this is our favorite, it gives a little kick to the salmon. sherry
  2. hi, I don't know if this is the one you are talking about: sesame chicken and vegetables (4 pts per serving, serves 4) 1 pound boneless skinless chicken breast 2 tsp peanut oil 2 cups brocolli and cauliflower florets 2 T teriyaki sauce 1 tsp sesame oil cut chicken into bite size pieces, heat a wok or large frying pan o medium heat until drops of water "dance" when sprinkled into the pan put the peanut oil into the pan and swirl to coat the pan. add brocolli and cauliflower and stir fry until brocolli turns bright green. add chicken and dstir fry until cooked. cover pan and simer for 5 minutes if vegetables are not fully cooked. stir in teriyaki sauce and sesame oil and serve. hope this helps. sherry
  3. I use the same recipe and make dumplings. Since it is getting cooler I have been using 1 C FF chicken broth, 1 C water boil together add the biscuit mix in drop form and boil for about 5-7 minutes. I also sometimes add 2 oz chicken breast. Makes a really yummy hot treat!! horseshow mom

  6. Opus99, Hi I usually make the angle food cake(s) all varieties into muffins or cupcakes. Just use cupcake papers and they come out fine. I have yet to have a problem with them except that they are so good it is hard to eat just 1 or 2.   7. This meatloaf is excellent, I wasn't sure when I first made it how it would be accepted but it got rave reviews even from my picky teen. I actually got 11 servings out of it by putting 8 servings into a pan for 8 mini loafs at 4 1/8 oz per loaf and had 12 oz. left to be put into a small glass dish for my DH. I actually had requests to have the leftovers the next night...what a change!! I was going to cut the recipe in half but being able to serve leftovers there is no need. BTW: for each mini loaf I counted it as 3.5 points. horseshow mom

  9. Hi clamhead, sorry it took me so long to get back to this site, I have teenagers!! I am in Gainesville, so not too far from you. If you don't want to bother with making your own meringues, Publix has the Miss Meringues (low fat choc. chip) that are 5 cookies for 2 points. I also found them at Bed Bath and Beyond but they are a little more $$ there, also have more of a selection though.

I have a meringue cookie recipe that was great and I think only .5 pts (if that) 3 egg whites 1/2 tsp cream of tartar 3/4 c sugar 1/4 tsp flavoring (I like almond) beat egg whites until foamy, add cream of tartar, beat on medium speed until soft peaks form, gradually add sugar beating on high until stiff peaks form and sugar is dissolved (about 5-6 minutes) beat in extract. using a pastry bag, dollop on parchment paper covered cookie sheet. bake at 225 degrees for 25 minutes; rotate baking sheets to a different oven rack. bake 25 minutes longer or until firm to touch. turn off oven; leave cookies in oven with door ajar about 1 hour or until cool. yield 4 dozen nutrition analysis: one cookie equals 13 calories 0 fat 0 cholesterol 3 mg sodium 3 g carb 0 fiber this recipe came from light and tasty december/january (meringue candy canes)
  14. The No Pudge brownie made in a dixie cup is 2TBSP no pudge brownie mix 1 TBSP flavored yogurt (the white chocolate FF is excellent) mix in dixie cup, they say 3 oz. but I use the kitchen size 5 oz. microwave for 1 minute and you have a tasty hot treat for only 1 point. horseshow mom
