TracyD ************ Sir Isaacs Fig Bars Ingredients FILLING 11 large dried figs, cut in half - 8 1/4 ounces 1 tsp grated fresh orange peel 1/2 cup apple juice DOUGH 1 cup all-purpose flour 3/4 cup + 2 tbsp. whole wheat flour 1/2 tsp baking powder 1/4 cup sugar 3 tbsp + 1 tsp. margarine 1/2 cup + 2 tbsp. water Directions Preheat oven to 350~. Lightly oil or spray with a nonstick cooking spray a baking sheet. TO PREPARE FILLING: Combine all filling ingredients in a blender container. Blend until figs are in the form of a thick puree. TO PREPARE DOUGH: Combine both types of flour in a large bowl - along with baking powder, and sugar and mix well. Add margarine. With a fork or pastry blender - mix until mixture resembles coarse crumbs. Add water - stirring until ingredients are moistened. Now - with your hands - form dough into a ball, adding additional water, 1/2 tsp. at a time, if necessary, until dough holds together. Place dough on a lightly floured surface, knead a few times and then shape into a log. Roll it into a 12 x 14 inch rectangle. Cut rectangle lengthwise into 3 long strips. TO ASSEMBLE: Divide filling evenly between the strips and spoon down the center of each strip. Fold dough lengthwise and seal edges by crimping with a fork. Place rolls on prepared baking sheet. Flatten slightly with your hands. Bake for 20 to 25 minutes, until bottoms are lightly browned. Remove to wire rack to cool, and when cool, trim the ends and, using a sharp knife, cut each log into 10 bars - each 1 1/4 inch wide.     Tofu recipes?

    Anyone know some good ones? Preferably with points, of course. I got a tofu making kit for Xmas and plan on making some tofu, so it would be nice to have some recipes to try it out in! Thanks for any help. TracyD
  7. This sounds delicious! I'm even thinking my finicky 2 yr old would eat it! I am going to try it with the apple, then do a version with strawberries and blueberries. (ds' favorite fruit, I think!) TracyD

  11. Can someone run this recipe through for nutritional info: This was the recipe given to me, but I did one substitution...so nutritional info for one or both would be deeply appreciated! Fuit and Bran Muffins 2 cups 100% All Bran (I didn't have that, so I substituted 2c wheat bran) 1/2 cup oatbran or oatmeal ( I used oat bran) 1/2cup whole wheat flour 1/4 cup sugar 1 cup ff plain yogurt (or buttermilk) (I used yogurt) 2 egg whites 1/2 cup applesauce 3/4 cup blueberries 2/3 cup diced strawberries 2 tsp baking powder 1/2 tsp baking soda pinch salt 1 tsp vanilla 1. Mix bran, oatbran, yogurt, applesauce, egg whites, vanilla and sugar. Let stand 2 or 3 minutes. 2. Stir in dry mixture (wheat flour, baking powder, baking soda and salt.) 3. Add fruit and stir. 4. Spray muffin tins with non fat spray, spoon mixture into muffin tins. 5. Bake 15-20 minutes at 400 deg Far. DO NOT OVERBAKE! Muffins are done when they spring back. Makes 12 muffins **you can add different fruits, if you like!

  14. Think the same thing would work with boneless chicken? There's a restaurant down my way that makes awesome pulled chicken (plain, no sauce), so I'm thinking this might work for chicken. Mmm... I might have to try that! TracyD

  16. Thanks! (Re: raisins). I'll have to try running the recipe thru mastercook using brown rice instead of white. I think it might lower it slightly, as white rice = 5pts a cup, and brown =4. TracyD
  17. Dh LOVES rice pudding, but hates raisins, so I'm going to leave those out. Does anyone know if/how much that changes the points? Also, I'm thinking of next time trying this recipe later using brown rice instead of instant white. I imagine that would change the points too. TracyD
  18. Charski -- made this one today, and it was delish! I misread the part about adding the broccoli in 35-40 minutes before serving... had it in from the beginning, so it sorta disinigrated. (LOL) Ah well, it was still tasty! And dh didn't care since he didn't have to cook. (He knows the rule is eat what I cook, or fix your own. heh) But I thought for white rice 1c=5 pts brown rice 1c=4 pts wild rice 1c=3pts Am I off the mark? TracyD

  20. I haven't tried this one myself, but it sounds yummy. If/when I do try it, I'm going to puree the sauce and use it as a glaze. TracyD ****************************** No Headache Holiday Sauce 12 oz fresh cranberries ½ cup water 3 Gala or Rome Apples, peeled and chopped coarsely 2 Bartlett Pears, peeled and chopped coarsely 4 TBSP sugar, or to taste 1 TBSP plus 1 tsp cinnamon Combine all ingredients in a saucepan. Cover and simmer, stirring occasionally, until cranberries pop, 25-30 minutes. Cool to room temperature to chill. Makes 2 cups, serves 6.
