  1. I got this one from a Betty Crocker cookbook, and ran it through the Recipe Builder on the WW site. They don't sell the Mrs. Meringue cookies in my area, and I was getting desperate! These hit the spot. You could modify them, say add mini chocolate chips, but be sure to recalculate the points if you do . These are a great item to take to a potluck or dessert party. Chocolaty Meringue Cookies 3 egg whites 1/2 teaspoon cream of tartar 2/3 cup sugar 2 tablespoons plus 1 teaspoon baking cocoa Heat oven to 275º. Cover cookie sheet with aluminum foil or baking parchment paper. Beat egg whites and cream of tartar in medium bowl with electric mixer on medium speed until foamy. Beat in sugar, 1 tablespoon at a time; continue beating until stiff and glossy. Do not underbeat. Fold in cocoa. (Batter will not be mixed completely; there will be some streaks of cocoa.) Place meringue in decorating bag fitted with large star tip (#4). Pipe 1 1/4-inch stars onto cookie sheet. Number of servings: 48 Serving Size: 1 Points: 0 for 1, 1 point for 5 cookies, 1.5 points for 6 cookies. Bake 33 to 35 minutes or until outside is crisp and dry (meringues will be soft inside). Cool 5 minutes; remove from cookie sheet to wire rack. Store in airtight container. Kate

    Diet Coke Brownies

I owe you guys an apology  - I mistyped the number of servings when I originally posted this recipe - cut into 24 pieces it comes to 2 points per brownie. I am very sorry to have misled anyone. It is ALWAYS a good idea to run any recipe through the recipe builder, or other tool, to check the points for yourself. I hope no one was hurt by this. Thanks for all your kindness, and to Dawn for pointing out the discrepancy!! Kate
  5. I know the Diet Coke cake is "old news" for many of us, but with so many new Buddies coming on board this month, I thought I might repeat this, with my variations. 1 box Betty Crocker Devils Food cake mix 10 ounces of Diet Coke Mix together, adding more or less Diet Coke to get a nice batter. Spray a 9X13" (or larger) baking pan with non-stick spray, and lightly flour. Bake at 350 degrees until it springs back in the center when touched. Cool and cut into 24 pieces, 2 points each. I had it hot with 1/2 cup of FF, NAS ice cream, for a luscious 3 point treat! Be sure to check the points for your cake mix, from the nutrition label on the box. Kate
