  4. ***** JOYFUL ALMOND CHEESECAKE ***** From Desserts Every Night, Page 160 2 (8-ounce) pkgs Philadelphia fat-free cream cheese 1 (4-serving) pkg Jell-O sugar-free instant chocolate fudge pudding mix 2/3 cup Carnation Nonfat Dry Milk Powder 1 cup water ½ Teaspoon almond extract 1 ½ teaspoons coconut extract 1 cup Cool Whip Free 1 (6-ounce) Keebler chocolate piecrust 2 tablespoons flaked coconut 1 tablespoon (1/4 ounce) chopped almonds 1 tablespoon (1/4 ounce) mini chocolate chips In a large bowl, stir cream cheese with a spoon until soft. Add dry pudding mix, dry milk powder, and water. Mix well using a wire whisk. Blend in almond extract, ½ teaspoon coconut extract, and ¼ cup Cool Whip Free. Spread mixture into piecrust. Refrigerate while preparing topping. In a small bowl, combine remaining ¾ cup Cool Whip Free and remaining 1 teaspoon coconut extract. Spread mixture evenly over chocolate filling. Evenly sprinkle coconut, almonds, and chocolate chips over top. Refrigerate for at least 1 hour. Cut into 8 servings Serves 8 Each serving equals: HE: 1 Protein; ½ Bread; ¼ Skim Milk; 1 Slider; 15 Optional Calories 214 Calories; 6 gm Fat; 12 gm Protein; 28 gm Carbohydrates; 644 mg Sodium; 73 mg Calcium; 1 gm Fiber DIABETIC: 1 ½ Starch/Carbohydrate; 1 Meat; 1 Fat This recipe came from Healthy Exchanges.

Almond Joy Smoothie serves 2 (1 cup each) 1 1/2 cups dannon plain fat free yogurt 1/4 cups Land O Lakes fat free half and half 2 tablespoons Hershey's lite chocolate syrup 1/4 cup splenda granular 1/2 teaspoon coconut extract 1/4 teaspoon almond extract 1 teaspoon flaked coconut In a blender container, combine yogurt, half and half, and chocolate syrup. Cover, process on blend 15 seconds. Add splenda, coconut and almond extracts. Re-cover and process on blend for 10 - 15 seconds till mixture is smooth. Evenly pour into 2 glasses. Sorinkle 1/2 teaspoon coconut on each one and serve at once.   11. Auntie Em, I don't know if you live near Jewel/Osco but here in Chicago they take expired coupons up to 5 years. My sister works for Osco and she told me. Also, if something rings up different from the sale price or shelf tag you get that item FREE!
  12. I recently tried Heaven's Bistro Chicken Sausage Pizza. I feel it is the best tasting frozen pizza around. I even ate it cold for lunch the next day. It was delicious!

  14. I am one of those people who loves 800 #'s. Do you think the next time you have these items you could post the 800 #? I sometimes luck out and get coupons for freebies. I called Lays about their WOW chips and I got a coupon for a free bag. I also got free Jolly Time popcorn this way. Thanks a bunch!
  15. A BCBer made her own excel spreadsheet and I was lucky enough to have downloaded it. Another BCBer made her own unofficial journal (Chey) and WW made her remove it. My computer was attacked by a virus and I lost everything. And now with this new Mydoom virus I'm afraid to have anyone send me anything. My husband replaced our old computer with a Dell and I want to keep it healthy.

  20. Here is a recipe I used a few years ago from a diabetic magazine. It was delicious and creamy. My nephew (who was 4 at the time) licked his cup clean. I am not totally sure of the points. Maybe someone can let me know for sure. Thanks. Diabetic Eggnog 1 1/2 quarts fat-free half-and-half 1 teaspoon vanilla extract 1 teaspoon rum extract 1 (1-ounce)package vanilla sugar-free, fat-free instant pudding mix 1 tablespoon granulated sugar substitute 1/2 cup frozen fat-free whipped topping, thawed Ground nutmeg, optional Combine first 3 ingredients in a large bowl. In a small bowl, combine pudding mix and sugar substitute. Add pudding mixture to liquid mixture, stirring with a wire whisk until smooth. Cover and chill until ready to serve. Top each serving with 1 tablespoon of whipped topping. Sprinkle with nutmeg, if desired. Makes 7 (3/4 cup) servings. Points: 3 (?).
  21. I know that Betty Crocker discontinued the Sweet Rewards line of low-fat mixes because there was no demand for it. I don't know if that includes the brownie mix because I know I bought some a few months back. Anyhow, I emailed BC and asked if they discontinued the brownie mix. I will post their reply when I get it.
  22. I like to make a parfait. I use 8 oz light yogurt (2 points), 1/2 cup lite frozen sliced strawberries, thawed (1 point), and either 1/2 cup Health Valley Real Oat Bran (3 points) or 1/2 cup Post Grape-Nuts (3 points). It's huge and keeps me going till lunch.

  24. I save the little cups that applesauce comes in and that's what I use for mashed potatoes, ice cream, jello, pudding, etc. If I use a regular bowl I know my portions would soon grow.
  25. I am a peanut butter junkie! I have to have it everyday. That is the one food I won't give up. I love everything about it. I love the smell, the taste, the texture, the creaminess, the crunchiness. I want some right now!
