  1. Easy Spicy Black Bean Soup from foodnetwork.com 2 tablespoons olive oil 1 1/2 cups chopped onion 2 cloves garlic, finely chopped 1 cup chopped green bell pepper 1 cup chopped red bell pepper 1 tablespoon cumin 1 teaspoon cayenne pepper 6 cups low sodium chicken stock 2 cans black beans, drained and rinsed Salt and pepper Cheddar cheese Sour cream Chopped red onion In a large heavy pot, heat oil over medium heat. Add onion, garlic and peppers and cook until tender about 5-8 minutes. Stir in spices and toss to coat vegetables. Pour in stock and beans and bring to a boil. Reduce heat to a simmer and cook for 15 minutes. In a blender, puree half of the soup until smooth and stir back into soup pot. Serve hot with garnishes. Suzie's Notes: This is good, restaurant-quality soup. I skipped the garnishes completely and served with a corn muffin.
  2. This was yummy! I used chicken and fresh garlic and ginger. I also added pea pods, bamboo shoots, water chesnuts, onion, and straw mushrooms.
  3. I made a 1/2 recipe this morning using Silk Soy Nog (soy eggnog) in place of the milk. I added some nutmeg & omitted the sugar. Delicious and very cool for the holidays.

  5. Good morning Runners! I'm happy to say that I completed week 5 last week. I ran on the beach and then took off my shoes and walked a long cooldown in bare feet in the water. Bliss! DBF gave me a sorta-compliment, too: "You're not as slow as I thought you would be." Um...thanks?? LOL. I was especially proud of Week 5, Day 3 -- 20 minutes straight. mrss, that was a quick recovery from your injury. I'm glad you're feeling better and back on your feet again. Ronneshia, I read your description of your 5K and I'm so happy for you! Congratulations, you did it!!! I'm off to do Week 6, Day 1 this morning. I was waffling about doing it now or later this afternoon...but as mrss's quote says (thanks, I love those quotes): The decision has already been made. Edited to add: Workout Done! I cranked up the speed a little on the tm today in honor of my not-slowness.
  6. buddies, quick check-in from me. I just finished my second week repeat of Week 4; it was a smart move to do the repeat as now I feel good and ready for week 5. I'll be completing week 5 on an island beach with DBF. See you all in a week or so!
  7. You can make a yummy tofu scramble. You can use a recipe like this as a base and branch out from there.

Collie, congratulations!!!!! mojo, how is no pretzels? Gremlina, I wish it were cool here, I'd love to run in overcast weather. I just finished week 4, day 2 of Couch to 5K. I didn't get all three runs in this week. I think that I'll repeat week 4 this coming week, too...it's still pretty tough and I'd like to give myself plenty of time to build a base. I'm feeling good!
  11. I also wanted to say that there is nothing wrong with pasta and pizza, in moderation. Make sure you are getting the healthy 8 guidelines and don't worry about the rest for now.
  12. Are you eating your target point? Your Flex points? Your activity points? I would first make sure that you are eating enough. With that much exercise, it is important to properly fuel your body in order to lose.
