  1. For those who asked, the reason I listed points on this recipe was because there were a lot of flex-ers crossposting asking for points. So I put them in. At the time that I made up the recipe it was 100% core. I am not sure if anything has changed since then, as I have not been to meetings. Nikkid - I'm glad you like them. I'm trying to get back in a core frame of mind, and it's good to be reminded of recipes I used to love. Methinks it's time for a taco bake as well!
  2. I bought Tilapia at Wally World the other day - a four pound box for maybe 8 bucks? Anyhow, they are boneless, and frozen in indvidual wrapping with 2 pts. in each wrapper. I'm trying to work fish back into my diet and it was really delicious and mild.
  3. I think so. The only thing you might have to compensate for using brown rice is that the boil in bag rice comes out separate but moist, so it mixes well with the pineapple.
  4. I guess I can post my variation. Cause I did change it up quite a bit due to little boys who won't eat anything that has super hotness in it. It's in the March 2007 issue. 1 can black beans, rinsed & drained 2 cloves garlic, minced 1/4 tsp. black pepper 1/4 tsp. paprika 1/4 tsp. turmeric 1 egg white 1/2 cup shredded fiesta blend (cheddar, monterey jack, etc.) 1/4 cup cornmeal 4 tbsp. light sour cream 1 3.5 ounce boil in bag rice 2 tsp. butter 1 cup diced fresh pineapple 2 tbsp. fresh chopped parsley 1/4 tsp. salt Prepare the rice according to pkg directions. While it's cooking, put butter in a medium skillet. Saute' the pineapple over med high until it's just starting to brown a bit. Mix drained rice, salt, pineapple, & parsley together. Cover and set aside. Puree 1/2 cup of the drained beans with the egg white. In a separate bowl, partially mash the remaining beans with the garlic and spices. Mix in the cheese & the bean puree and shape into four patties. Dredge the patties in cornmeal and cook in a sprayed skillet over medium heat until the cornmeal is lightly browned and the patties have firmed up. Serve a quarter of the rice mixture (about 1/2 cup or so) with 1 patty and 1 tbsp. of sour cream. My nutritional information is probably a bit less than the mags, because I omitted a few low-cal ingredients. But it came up with 294 cals, 8.7 g of fat, and 3.5 g of fiber for the patty w/sour cream, and the rice. So 6 pts!!! My husband and boys ate theirs with salsa as well.
  5. Oh my. I don't think I can post recipes straight out of CL, but if you get the mag, this recipe was delicious. We had it for dinner tonight, complete with the pineapple rice (which I thought was a strange idea, but it turned out so very tasty!). Even my 7 & 8yo boys gobbled it right up. The black bean cake w/lt. sour cream and a side of pineapple rice is only 6 points!
  6. Are you looking for vegetarian baked beans? Or just vegetarian beans? Any bean is vegetarian (i.e. not meat/flesh) as long as it hasn't had like hamhocks or bacon added to it. Check the ingredients. Bush's makes a tasty vegetarian baked bean. We also use black beans, great northern beans, and red beans a lot in soups and chilis. And it's always good to have a can of garbanzo beans on hand to make hummus! Yummus!

  9. I have absolutely no patience so even though I lost out on the free jiggle free dvd, I bought mine at Target. Instant gratification! Wait, do ya think that might be why I'm fat?
  10. I should be in week four, but I've kind of slacked off. This morning I was unable to do the 5 minute portion. But that is mostly because I tried to take Rufus and he wanted to run an entirely different direction than me. I did get a semi-decent workout in. And Rufus ain't coming on Wednesday!

  12. I need to lose at least 78 more pounds. Quite probably even more. And not to come down on those who have done it, but I don't wanna have plastic surgery. Don't wanna. At all. But I don't wanna have loose skin either. I believe (however misguidedly) that there's gotta be exercises or something that I can do on this long road that will minimize the loose skin. There's just gotta be. So tell me what you think. What have you done on your journey that has done wonders for your skin? I'm just getting started on this journey, but I've been fat for a long time. I wanna do everything in my power to have the body I expect to see when I finish losing all this fat.
  13. I only got in two workouts this week, but they were surprisingly easy. I've gotten through week four in the past though before life intervened. So I'm planning on moving onto week three this week and I'm looking forward to my 5K on the 30th!

  15. Ooh Chris, your lime cilantro polenta chips sound awesome. That would be just right for taco salad with my family!
