  1. I've been making these breakfast sandwiches for a while now and they're great! I add an egg either scrambled or "fried" for an extra 2 points. The Morningstar Farms breakfast patties are delicious cooked on the George Foreman Grill. Hard to believe there's no meat in them.

This is a delicious, low-point salad that's perfect for a pot-luck supper side-dish or served on fat-free tortillas. 1/4 c balsamic vinegar 1/4 c cider vinegar 2 T Brown Sugar 1-1/2 tsp fresh lime juice 1/2 tsp ground cumin 1/4 tsp salt 1 garlic clove, minced 1 c kernel corn (thaw if frozen) 1 c chopped red bell pepper 3/4 c chopped onion 1/3 c minced cilantro 1 (15oz) can black beans; rinsed and drained Bring first 7 ingredients to a boil in a small pan. Reduce heat and simmer 2 minutes or until sugar dissolves. Combine vinegar mixture and remaining ingredients in large bowl. Cover and chill. Makes 8 servings (1/2 c each). Each 1/2 cup serving is 1.5 points. Per Serving: Calories: 82 Fat: 0.5g Fiber: 2.6g Protein: 3.9g

  4. I found this one in our local newspaper and had to try it. It was super. Even fussy DH liked it. I substituted ground turkey for the beef but calculated the points based on beef. 1 pound lean ground beef 1 c chopped onion 1/2 c uncooked (not instant) rice 1 medium head cabbage (about 8 cups), chopped 1 (20-28oz) can crushed tomatoes 1 T brown sugar 1 T white vinegar 1/2 tsp. salt Brown beef and onions and drain. Add cabbage. Cover and cook until wilted. Add remaining ingredients, bring to a boil. Cover and simmer 20-30 minutes. Or turn into a casserole dish and bake at 350 approx. 1 hour. By my calculations, this came up to be 4 points per 1 cup serving.
  5. Tried this the other night with soy crumbles instead of meat and added mushrooms, peppers, olives and onions. I also used fat free pizza sauce instead of the tomatoes. Absolutely delicious! A must-try for pizza lovers! Thanks for sharing this one.
  6. I found this in an ad for Ocean Spray Cranberry Juice. My DD and I had it with our breakfast the other day and both loved it. Hope you do too! 4 oz. (1/2 cup) Light Cranberry-Raspberry Drink 1/2 banana, sliced 1/2 c vanilla fat free yogurt 2 frozen strawberries 1/4 c. crushed ice (or several ice cubes) Whirl in blender til well mixed. Makes 1 serving. According to the ingredients packages that I used, it came out to less than 2 points. But I called it 2 points per serving. Very satisfying! Enjoy.
  7. I've made this recipe a few times already. It's a hit with my family. For Easter, I used strawberry jello and fresh strawberries instead of oranges. Since my sister and I are both OP I figured I'd make a dessert we could enjoy too. Well, guess what, my dessert went while the others (cheesecake and chocolate pie) sat. Everyone commented on how tasty it was. Even at 2.5 pts per cup, it's a good point value.
  8. Tried this the other night and it was delicious! I didn't have time for the slow-cooker though, so I made it in a covered casserole and oven cooked it. It only took about 1.5 hours, but I had to add more water halfway through baking. It was still great!
