  1. I always make this one. Big bonus, you can count dessert as a veggie! Crustless Pumpkin Pie entire pie is 4 points 1 15 oz can pumpkin (not pie filling) 1/2 cup Egg Beaters 1 1/2 cup skim milk 3/4 cup Splenda 1/2 tsp salt 1 tsp pumpkin pie spice Beat all together until smooth. Put in pie pan sprayed with non-stick cooking spray. Bake at 400 degrees for 15 minutes, then at 375 degrees for 45 minutes or until a knife inserted in center comes out clean. Tinka's notes you can use egg whites instead of buying Egg Beaters You can use light soy milk instead of skim. It is wonderful served cold and can be frozen in slices. enjoy! This is not a new recipe....but we have new buddies every day that NEED to see this!
  2. Hi Buddies! I'm still reading and I'm always glad to "hear" what my buddies have to say. I do miss some of the old "regulars", you almost feel we know each other and have been long-time friends . The real reason I stopped posting is, I'm so confused with the points-plus program. I'm trying to get to a meeting so I can get the new info, but I'm still following the old way until then. Most people talk about the new program and the points are so different . So, right now I feel I don't have much to offer. I am talking to my director about having a Weight Watchers at work. So far 5 people are interested, so keep your fingers crossed! As soon as I get the new info I'll jump right back in! Thanks for all your continued support buddies!

  4. Hi buddies! Last day of the work-week for me . I have tomorrow and Saturday off, then I work the desk on Sunday. I went to bed feeling totally stuffed! I bought some black seedless grapes and they were so good I couldn't stop eating them! Each one I kept saying, just one more . Well, at least it wasn't chips or cookies! Found a few new recipes to try, hope to find some more tonight before I make up my weekly menu. I get so tried of the same old meals, even when they are things I like/love. It's fun to try some new things, and you never know when you'll find a new favorite!! Lynn~ Glad you're sleeping better, I have been too. I'll be thinking of you this weekend for the big ride!   5. Hi there buds! Up and ready to roll today. I went to bed at 9:30 and was asleep by 10ish, boy, I needed some extra sleep! I hope to have time to browse the recipe files tonight and find some "new" ideas for dinners. It's always fun to go waaaaay back and see what you can find .   6. Good Morning Buddies! Not much to report today, just work, grocery store after, and I hope to get to bed on the early side tonight. Saw DD yesterday, she's going 100 mph trying to get everything done in her new house! I told her to just calm down, it will all get done. DH said, that's what you look like everyday! He's probably right! I have Friday off ( I work Sunday) so I can go over and help her and we can do some shopping with all her gift cards. That will be fun! I got a short 20 min. walk in and did some weights last night. Not as much of a workout as I'd like, but better than nothing. Fish, a mix of bulgar, brown rice and wild rice ( that's the only way my gang eats bulgar) and a big salad for dinner. So, if I can get in some exercise, it will be a great day!   7. Good Monday morning buddies! I'm still trying to recover from the last few months of change, planning, and lots of other stuff! . I'm sorry to say I gained 6 lbs since early summer. Probably would have been more if not for all the wonderful summer produce! Anyway, I'm back "on the wagon" and actually excited to start the journey once again! Meals are planned, I have a new journal, pulled out my Beck workbook, now I just have to get a workout plan in place. Tonight I will do some weight training after a quick walk while dinner is cooking. How do you guys do it? I do still have kids at home and make dinner every night. By the time I get everything done after work, it's almost time for bed! I have to shower between 7:30 and 8 because my hair takes so long to dry. I just have to put on my thinking cap and figure this out! DD and her husband(!) got home last night from their honeymoon. Can't wait to hear all about it! I spent most of yesterday setting up their bed and kitchen so it was ready when they got home and they could just collapse in bed if they wanted to. DD is like me and probably stayed up half the night unpacking all their stuff! The house they are renting was being painted and the kitchen was redone, so they couldn't move in before the wedding. I also put some things in the fridge so they could have some breakfast before staring their day today. Well, I have to pack my lunch for work. Hope you all have a great day and week. Later buddies!
  8. Good Morning Buddies! Well, day one went very well. After a trip to the farm market I cut up lots of veggies and have tons of fruit at the ready. I bought a bottle of that spray salad dressing to leave at work. I can always get salad so today I'll take some leftover chicken to add to my lunch salad. I'm going "all-core" until Sunday, then I'll start journaling and using WAP and APs. I have to journal or I totally lose track of the points I use. Next, I have to plan some exercise . It was always easy to get a workout in when I was not working. I may have to join a gym for the winter, that would put a fire under my behind, I hate to waste $$!! Becky~ Thanks on the picture. Hope "meet the teacher" went well. I'd be crazy if I couldn't understand what was being said. I feel akward when they speak spanish on the phone! Lynn~ Good luck on your ride!! Holy-moley!!!   9. Hello there buddies!!!! OK, I'm back and can't wait to catch up with everyone! I sat down and made my menu for the week last night. It will be quite different this time as I always had plenty of time to cook before I started working full time . I'll figure it out, if you all can do it, so can I! The wedding was just perfect! I'll try to get some pics up soon ( I'll have to wait for some help, I still don't know how to do it! ). All that stressing, and fretting was all for nothing. The bride was beautiful ( if I do say so myself ), the weather was perfect, and it was so nice to have my whole family together! The next morning, at 10 am, we were off to pick out my other daughter's wedding gown! Yes, I had about a cup of coffee between weddings! Really, it was because both my sisters were there and we wanted then to share in the "experience". DD found a gown and looks just beautiful in it, so here we go again! I'm really going to try to post daily, I always found it so helpful and I really love all my buddies! I'm off to the farmer's market to start my SF journey once again, with help from you guys, I know I'll be back to "normal" soon. Talk to you soon. Have a great one!
  10. Hi there buddies! OMGoodness! I hope you remember me! I have been reading quickly, but haven't posted in forever! So, life has been super crazy for the last month or two. I have almost completely fallen off the SF band-wagon . Not so much eating "junk", more like not eating much at all. I plan to go back hard core mid-September. Let me tell you what has been up. You probably remember my DD is getting married.... 3 WEEKS from today! Every time I think I have it all under control something else pops up . And, I got a big promotion at work. I went from "butt-wiper" () to Assist. to the executive director and I'm now fulltime. Lots to learn but I really like it. Then DD#1 is getting married June 10th, so as soon as this one's over, I'm right back at it! Add in Christmas, and well,!!!! Hope all is well with my bestest buddies. I'll be back in a few weeks and be more determined than ever, so I'll need my friends for support. Stay well buds.

  13. Asparagus and Zucchini Crudi This was a really pretty and really delicious salad! It's good without the cheese, but worth the point to shave just a little on top! It's a good base and you could add roasted peppers, onions, basil, whatever! Recipe courtesy Giada De Laurentiis Prep Time:10 minInactive Prep Time:--Cook Time:--Level:EasyServes:6 to 8 servings Ingredients 2 zucchini, trimmed 1 bunch asparagus, trimmed 1/4 cup extra-virgin olive oil 2 tablespoons lemon juice 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1-ounce shaved Pecorino Romano, for garnish Directions Using a vegetable peeler, shave the zucchini into long thin strips. Thinly slice the asparagus on a diagonal. Toss the slices together and place the salad in a serving bowl. In a small bowl, combine the olive oil, lemon juice, salt, and pepper. Stir to combine and drizzle over the vegetables. Toss to coat. Garnish with the Pecorino shavings. Serve.
  14. Good morning buddies! Lately I have so much going on that my brain has turned to mush! At work, corporate decided to do the interviews for the new position. We have gotten over 50 applications for the job! The Exec. director and business director really want me to get the job, so they have me doing EVERYTHING!! They are training me how to do everything hoping they will think I'm the best one for the job. Yesterday I handled some of the new employee orientation and balanced the resident accounts for the month of June. So much to learn!! Add to that the TWO weddings! My mind is going 150 MPH! I'm trying to tell myself to just get through the September wedding then go full speed ahead with the April/May wedding, it's just not working!! :bcb_wink3 Thankfully, it's summer and the fruits and veggies are fabulous, so grabbing things on the go hasn't been a problem ( I usually do a lot of batch cooking in the winter, but just haven't had the time for weeks!) salads, fruit and yogurt, smoothies, that's what I've been living on! Exercise? Well, does running around going to every store within about 50 miles looking for wedding stuff count? I am doing weights at night, I found a beautiful dress for the wedding. It has a jacket, but it's a sleeveless dress. I want to have some decent arms so I can take the jacket off! Well, as usual, I have lots to do.   15. Hi Sailor! I finally had some "down-time" yesterday and sat down to post.........but I couldn't get on! It's kinda sad to pop in and not see anybuddy here, but I've been so busy I just can't take the time to post ( I do read what little is here daily). Plus, I've just been running around dealing with "every day stuff" and would probably just bore everyone with my "doings". I really miss our little family , where's Carol? I hope she's alright. And Donna, she's going through so much with her mom. I loved hearing from Kimberley, she made me feel like my day was not too busy with all she did each day. Glad to still "hear" from Lynn and Sailor, hope we can all get back togther soon. Maybe we can have a FAMILY REUNION thread, just so we know all is well with our buddies. Well, 2 months til the wedding! Between that and working fulltime (after 28 years at home!) I don't know if I'm coming or going! I need about 5-6 hours added to my days! Oh, and if you think things will calm down after the wedding, DD#1 is getting married, probably in April! Hey guys, I'll pop in later. I have a ton of errands to run today but I'm planning to have a nice calm evening. The plan is giving myself a mani and pedi, heck, maybe I'll even give myself a facial! Have a good one buddies!
  16. Hi there buddies! Remember me? OMGosh! I've been crazy busy lately with no real end in sight! DD#2 bought a house and closed 2 days before DD#3's bridal shower . I spent the weekend running from the new house helping move, to the store for "stuff", to my house to cook and clean, back to help move, setting up for the shower, hosting the shower, cleaning up after the shower, then to work on Monday! I was so tired on Sunday night that I dialed the TV remote to call my sister and sat there with it to my ear wondering why it wasn't ringing! I have off today, but I promised DD I'd come over to help hang curtains and pictures. OK, when will someone come over to help ME!!?? Still going strong on the last of the wedding plans, 72 more days! To top it all off, they offered me a full-time management job at work! How 'bout that? From butt-wiper to management just like that! Lots of thinking to do, I'll try to fit that in at some point ( like at night in bed, my mind goes 100mph and I wonder why I can't sleep!). I have to finish the laundry before I head over to DD's.   17. Good Morning to all my long, lost buddies! Wow! Sure is quiet around here! We had a nice Father's day with lots of good SF foods . I love that summer has so many healthy, delicious choices! But then I used a kabillion points on a piece of blueberry crumb pie . Actually, it was really good and my points re-started yesterday, so I'll just have to watch myself and get some extra APs this week. That is the beauty of this wonderful program . Lots of running and planning for DD's shower next weekend, I'm exhusted! We spent the whole weekend weeding, planting, and cleaning the yard. We also power-washed the whole house......what a job! Now I just hope the weather holds so we can have the shower outside by the pool. We are expecting 43ish people. I have work this morning so I have to run. Just wanted to check in and see what's going on. Miss you guys, see ya later!
  18. Good morning buddies! (wherever you are )!! OMG!!! Yesterday I ran around ALL DAY trying to finish up some shower/wedding stuff. I traveled 88 miles and kept coming out of stores empty handed! I get something in my head, and then just can't find it . I didn't take anything to eat or drink ( not knowing I'd be gone so long), bad idea!! Did you know they have candy at all the check outs, even at fabric and craft stores!!! I made it through and didn't "cheat" but boy was I hungry when I got home. On the bright side, I only had to use 1 public restroom! :bcb_LOL: I work today, that's why all the running yesterday. I had all four days planned out but had to cram today into yesterday's errands. I got a pair of the Reebok "simply tone" shoes last week (finally). Now of course, I don't buy the whole nice butt claims, but I did notice feeling different muscles in my legs and both my knees felt a little strained. Anyway, they are very comfortable.   19. H-E-L-L-O is anybuddy there? It's sooooo quiet here lately!? I've been gone a while, busy at home and then went to Maine for a while. Sailor, I looked for Lulu every time we were driving somewhere , just in case. Had a bunch of non-SF foods while we were gone, but made the best choices I could. Also took lots of walks on the beach and on the mountain trails. Back at it today........SF all the way! Off to work today but I'll check back later. Hope to see somebuddy (anybuddy ) then.
