YUM YUM YUM - I made stuffed peppers last night that were so tasty that I wanted to share them with all of you!!!
4 to 6 bell peppers, washed and de-seeded with the top cut off (0 pts)
1 lb ground chicken (16)
1/2 cup brown rice (8)
1 cup water (0)
1 large onion, chopped (0)
1 tsp chopped garlic (0)
2 tsp evoo (2)
3 cups crushed tomatoes (3)
1/4 cup white wine (1)
1/4 cup water (0)
oregano to taste
thyme to taste
fresh ground pepper
Cook the brown rice in the microwave (1/2 cup rice, 1 cup water) according to the package instructions.
Heat the oven to 375.
Heat a large skillet with the EVOO over medium high heat. Cook the ground chicken and chopped onions until thoroughly cooked. Season with salt and pepper. Add the garlic and sauté about 30 seconds being careful not to burn the garlic. Add in 1 1/2 cups crushed tomatoes and the cooked rice. Season to taste with oregano, thyme, salt and pepper. (I added a few pinches of red pepper flakes to give it some heat)
Spoon the mixture into the hollowed out peppers. Place the peppers into an oven safe dish. Mix the remaining 1 1/2 cups crushed tomatoes with 1/4 cup white wine and 1/4 cup water. Pour this mixture into the bottom of the dish. Cover tightly with foil and bake for 30 minutes.
At this point you can take the foil off and serve!! Yum!!!

(I made 5 heaping peppers for 6 - 6.5 pts per serving! I only had 5 peppers!)
