YUM YUM YUM - I made stuffed peppers last night that were so tasty that I wanted to share them with all of you!!! 4 to 6 bell peppers, washed and de-seeded with the top cut off (0 pts) 1 lb ground chicken (16) 1/2 cup brown rice (8) 1 cup water (0) 1 large onion, chopped (0) 1 tsp chopped garlic (0) 2 tsp evoo (2) 3 cups crushed tomatoes (3) 1/4 cup white wine (1) 1/4 cup water (0) oregano to taste thyme to taste kosher salt fresh ground pepper Cook the brown rice in the microwave (1/2 cup rice, 1 cup water) according to the package instructions. Heat the oven to 375. Heat a large skillet with the EVOO over medium high heat. Cook the ground chicken and chopped onions until thoroughly cooked. Season with salt and pepper. Add the garlic and sauté about 30 seconds being careful not to burn the garlic. Add in 1 1/2 cups crushed tomatoes and the cooked rice. Season to taste with oregano, thyme, salt and pepper. (I added a few pinches of red pepper flakes to give it some heat) Spoon the mixture into the hollowed out peppers. Place the peppers into an oven safe dish. Mix the remaining 1 1/2 cups crushed tomatoes with 1/4 cup white wine and 1/4 cup water. Pour this mixture into the bottom of the dish. Cover tightly with foil and bake for 30 minutes. At this point you can take the foil off and serve!! Yum!!! 30 pts total - 7.5 for 4 servings, 5 for 6 servings (I made 5 heaping peppers for 6 - 6.5 pts per serving! I only had 5 peppers!) **If I am wrong with the points, please let me know. I sometimes have problems figuring out points for my own recipes!**
  3. My DH and I are both on WW and he went to Bennigan's for lunch today with a co-worker. He had the Aisan Chicken Salad and I can't find the NI anywhere. Does anyone know how many points this salad is??? Any help would be appreciated!

  6. Okay, so I made this and it was a HIT! I omitted the raisins and added diced red bell pepper and diced celery and toasted the sunflower seeds and increased it to 1/4 cup of those - IT WAS SO TASTY!!! Thanks for this recipe...I will use it again and again! Great alternative to cole slaw!
  7. Thanks everyone! I found Wegman's light rolls (1 pt each!) and Hebrew National 97% ff franks - yum!! I also ended up smoking some skinless chicken breasts - YUM!! I appreciate all the feed back!
  8. This is a metaphor I heard my leader use today when my DH and I shared our milestones...I hit the 15 pound mark and DH hit the 25 pound mark. She said that it is similar to losing 3 bags of potatoes for me and 5 bags for DH. WOO-HOO - 15 pounds gone FOREVER!!!! :jump_jack

  10. Okay this might sound silly but I can't find 1 pt buns anywhere!!! Anyone out there from the Northeast that knows any 1 point buns and where I can find them?? Also if anyone has any good 1 pt hotdog suggestions I would appreciate this...favorite brands etc. Thanks!
  11. Hi buddies!! I forgot my book this morning and I can't find this on Calorie King (just the pre-cooked flank steak at Wegman's and I don't know if that is the same...) - I am having a salad topped with flank steak at lunch and I know points values for everything but that. I just want to make sure I stay in my range. Any help would be appreciated!! (it was about 4 ozs of steak last year so I'm assuming it will around the same amount this year...)
  12. Personally I do count it, but it is only 7 ozs...I think it should be 8 ozs. for a full serving.
