  1. This is an awesomely rich and creamy chocolate mousse. You would never guess it's made with tofu, or that it's only 2 points per serving. It's one of my favorite treats. 2 points per 1/2 cup serving. Makes 6 servings. Place in blender: 2 12.3-ounce packages silken tofu (in aseptic packages*) 1/4 cup sugar 1/2 cup cocoa powder 1 tablespoon vanilla extract Blend until VERY smooth. Divide among 6 1/2-cup serving dishes. Chill. *Aseptic-packaged tofu comes in a rectangular paper package. It may be found in the refrigerated section OR on the shelf. It does not require refrigeration until opened. Mori-Nu is a common brand. If you can't find it at your local supermarket, try a health-food store or an Asian market.
  2. 1 serving; 3 points 1 cup lettuce 1/4 cup sliced onion 1 cup cooked*, peeled, and sliced fresh beets, chilled 1/2 cup cooked green beans, chilled 2 tablespoons goat cheese 1 tablespoon Newman's Own Lighten Up Honey Mustard dressing Toss all ingredients together. Serve immediately *To cook fresh beets, rinse and trim off leaves and stems. Wrap in parchment paper, then foil. Bake in 425-degree oven 1 hour. Cool before peeling.
  3. 5 points 1/2 cup frozen black cherries, thawed 1 container Chocolate Underground Stonyfield Farms yogurt 1 tablespoon toasted slivered almonds Place cherries in parfait glass, top with yogurt, and sprinkle with almonds.

  5. Just bought a box of these last night. I've been looking for something (less expensive and just as filling) to replace the WW Just 2 Points Cinnamon Swirl bars. These seem to do the trick nicely, and are nice and high in fiber (5 grams per bar). Each bar is 2 points, and is very cereal-y and crunchy. I was impressed by the size of the bar, as well as the flavor. A box of 6 bars cost me $3.79, which sure beats the $4.50 I was paying for a box of 4 WW bars. I'd definitely get these again. Has anyone tried the All Bran Bites? I'd love to get some opinions on those.

    Broccoli Salad

    I had some broccoli that I needed to use up and came up with this salad. It's very tasty and filling; great for a potluck or for a brown-bag lunch. The following recipe makes 1 generous serving at 6 points. 1 bunch broccoli, trimmed, blanched, and cooled 2 slices cooked bacon, chopped or crumbled 1/4 cup minced red onion 5 dried apricots, chopped (or 2 points equivalent of raisins, dried cranberries, etc.) 2 tablespoons light Miracle Whip 1 tablespoon balsamic vinegar Salt and pepper 1 tablespoon sunflower seeds Mix broccoli, bacon, onion, and apricots in a medium bowl. Combine Miracle whip and balsamic vinegar in a small bowl. Pour dressing over broccoli mixture; stir well. Add salt and pepper to taste. Refrigerate until well chilled. Sprinkle with sunflower seeds before serving.
  11. We have a hand-me-down pressure cooker from my mother. My husband uses it all the time, despite the fact that he accidentally melted the sealer ring on the burner, and the cooker leaks. Frankly, I have been afraid to use the thing. I saw them using one on the Home Shopping Network last night, and now I want to buy one (that isn't defective and ancient like the one we've got). Can anyone recommend a good, easy-to-use, and not-scary-to-use cooker? Thanks! -Lulu
  12. Just bought my first box of VitaBrownies. I calculated them at 1 point each. This just doesn't seem right to me. I mean the walnuts alone (on top of the brownie) should be about 1 point. Wondering if they fudged the NI or something. By the way - I loved 'em. Any thoughts?

  14. I love these muffins! Because they are preservative-free, they do tend to dry out a bit. I recommend storing them in the fridge for up to a week, or wrap them individually and pop 'em in the freezer. Even when they're a little old and dry, try microwaving for about 10-15 seconds. A little spritz of ICBINB helps too! Also try the Trader Joe's brand Country Morning muffins - also 1 point and delish!
