  3. Turkish Spinach Salad 4 Servings (2.2 pts) This garlicky salad is a nice way to eat spinach and a great way to get a nutritional boost. It's best to use a good quality Olive Oil. Ingredients: 1 pound fresh spinach, washed, stems removed 2 fresh tomatoes, sliced 6 scallions, trimmed and thinly sliced 5 tablespoons plain nonfat yogurt 2 tablespoons extra-virgin olive oil 2 garlic cloves, minced 1/2 teaspoon dried thyme Salt and black pepper to taste Instructions: 1. Dry the spinach, tear it into large pieces, and combine it with the tomatoes and scallions in a bowl. 2. Combine the yogurt, olive oil, minced garlic, and thyme, adding salt and pepper to taste. 3. Add the yogurt mixture to the vegetables and mix well. Season to taste with salt and pepper. Nutritional Information: Per serving: 118 calories 8 g total fat (1 g sat) 1 mg cholesterol 10 g carbohydrate 5 g protein 4 g fiber 150 mg sodium
  4. I realize this is an old thread but maybe someone will see it and can respond. This recipe looked so good that I made it tonight. But my rice isn't cooking. I got the rice that isn't instant and I didn't cook it before hand but now I'm wondering if instant rice would have been ok and maybe cooked ahead of time too. It taste really good except for the "crunchy" rice. I'm letting it cook a little while longer. I hope it turns out it smells so good and I'm starvin'
  5. That sounds like something that would be good to take along in the car when you need something to munch on. I'll have to check on those.

  7. I have made mac and cheese before not using butter at all and it taste fine. I would just eat smaller amounts of what you have and count the points. I know it's hard to stay away from junk food when it's in the house but you can do it and think how proud you will be of yourself when you do.
  8. I tried these this morning for breakfast and was pleasantly surprised, they were really tasty. I didn't use SF syrup on them I just sprinkled a little cinnamon and splenda on top and sprayed some ICBINB on top as well. I'll definetly have them again. Thanks for sharing.
