  3. I thank goodness & my folks that I've always been a big veggie fan. Actually, okra is the only veg I avoid like the plague! Fresh spinach, 1 lb torn into pieces Fresh mushrooms, 1 lb sliced Onion, 1 lg chopped Olive Oil spray Garlic Powder Salt & Bk Pepper, coarsly ground Nutmeg, 2 dashes Lemon juice, 1 Tbsp Egg substitute (2 egg equivalent) FF Ricotta, 1 cup LF Italian Cheeses, shredded, 1/2 cup Spray lg skillet w/olive oil & saute uncovered spinach, mushrooms & onion over med-hi heat until mushrooms begin to brown slightly. Mix in remaining ingredients except for shredded cheeses. Pour into a sprayed shallow baking dish, top w/shredded cheeses & heat through in hot oven (450) @ 15 mins or until cheeses bubble.   4. With the pts so low & the serving size so generous, this great stuffing isn't just 4 the holidays. Hope you'll enjoy lots! 1cup Celery, chopped 1 cup Onion, chopped 1 cup Mushrooms, chopped 2 tbsp LF Margarine 1 cup Apple Juice, unsweetened 2/3 cup water 1/4 cup Brown Sugar 1 1/2 cup Apples, chopped 1 1/2 tsp Poultry Seasoning 1/2 tsp Black Pepper, course ground 8 cups LF Whole Wheat Bread Cubes, toasted 1/3 cup Egg Substitute 1 1/2 cup Cranberries, chopped 1/2 cup Parsley, chopped Saute 1st 3 ingredients in margarine until barely tender. Stir in juice, water, sugar, apple, poultry seasoning & pepper. Heat to a boil; reduce heat. Simmer 3 mins & remove from heat. In lg. bowl, combine bread cubes & apple mixture. Stir in egg, cranberries & parsely. Spoon into 2 1/2 qt. oblong baking dish sprayed w/Pam. Cover & bake 25 mins at 350; uncover & bake additional 10 mins. Points r super low, too! 1 lb pasta, uncooked 10 Garlic cloves 2 tsp fresh Thyme, minced or 1 tsp dried 2 tsp fresh Rosemary, minced or 1 tsp dried 4 Tbsp Olive Oil Either individually OR a combination of the following veggies wk real well: Carrots & Zucchini, coarsley grated Red Peppers, slivered Mushrooms, paper thin slices Snow Peas, Broccoli heads, broken into sm pieces 1 Tbsp Fresh Lemon Peel, slivered Place garlic on a square of foil. Cover garlic w/herbs & top all w/olive oil. Seal foil packet & bake @ 25 mins in a 450 oven. Cook pasta. Approximately 3-4 mins BEFORE pasta is done, add the veggies of your choice...@ 7-8 cups to boiling pasta water & cook 4 remaining pasta time. Drain well. Open foil packet carefully...(steam!!!) & mash garlic mixture slightly. Scatter lemon peel slivers on top. Toss w/pasta & veggies. Season w/S & P & grated LF/FF Romano cheese.   6. Hi Sarah, Finally tried your Zoo Cake recipe & it's terrific! I strayed just a bit & because I didn't have flour in the pantry, substituted w/low fat Bisquick & it worked out real well. I also added a dash of nutmeg since I like that spice w/my zucchini & also some lemon-pepper. If you're also a fan of peppers, I hope you'll enjoy my scaled down version of a dear aunt's stuffed peppers...Let me know! 4 lg. green &/or red sweet peppers 1 lb low-fat (50% reduced) bulk pork sausage 1 1/2 lbs fresh mushrooms, coarsley chopped 1 lg. onion, chopped (I like Vadallias best) 1 sleeve fat-free saltine crackers, crumbled 1 Tbsp. lemon juice 1 lg. egg (to bind) + 1/4 cup water Cut ea pepper in half & seed. Break up sausage & brown until 1/2 way done. Drain very well in collander. In same skillet, spray w/olive oil (Pam) & saute mushrooms & onion. Cover skillet once the veggies "get cookin'" to release juices from mushrooms. Combine sausage, veggie mixture & Saltines in lg bowl. Add garlic powder, S & P & lemon juice. Crack egg, scramble w/1/4 cup water & add to mixture. Stuff peppers. Place stuffed peppers in baking pan w/1/3 cup water. Spray peppers w/olive oil (Pam). Cover w/foil & bake at 375 for 35 mins. Uncover & turn heat up to finish at 425 for 15 mins. Onions 3 Tbsp fresh Ginger, grated 10 cloved Garlic, minced 2 Tbsp Curry powder 1/3 C Flour 3-4 lb LEAN Beef roast, cut into strips, 1/2"x3" (1/2 C+ 3 Pts) 1/3 C Timato paste combined w/2/3 C Water 1/2 C fresh Cilantro leaves, chopped Place Onions, Ginger & Garlic in bottom of crock-pot. Combine curry & flour & dredge beef strips. Place beef strips in crock-pot. Add tomato paste mix. Cover & cook on low @ 9 hrs. Skim any visible fat. Add Cilantro.   12. I'm learning the joys of crock-pot cooking. Doesn't get much easier or quicker! This cranberry chix sounds delicious...the cranberries make me think about the coming holidays. (This BCB "turkey" just might be a whopping 20 lbs lighter this yr (maybe! maybe!! Getting back to the recipe at hand...is there a less salty dry onion soup mix available?   13. 1 sm pkg FF Cream Cheese, softened 3 Tbsp FF Mayo 2 Tbsp Chili Sauce 1 Tsp Mustard 1/8 Tsp Garlic Powder 2 Tbsp Red Onion, minced well 1/3 C Cucumber(unpealed), seeded & minced 5 oz cooked Shrimp, cooled & chopped well 1/8 Tsp Dill Weed 1/8 Tsp Lemon Pepper Combine 1st 5 ingredients & blend vy well. Add remaining & mix. Cut small Pitas into quarters & lightly toast under broiler...keep a close eye on your Pitas! Top ea qtr w/shrimp mixture & to please the eye, a thin strip of red pepper looks nice. Re pts...I estimate if a serving = 4 qtrs, then @ 2 Pts/serving?   15. This is a nice refreshing & colorful change from the ordinary & low in pts. I hope you'll enjoy! FRESH FRUIT SLAW 16 oz canned Pineapple Chunks packed in juice 4 C Gr Cabbage, shredded 2 C chopped Apple, unpealed 1 C Carrot, shredded 1/2 C chopped Gr Pepper 1/2 C chopped Red Pepper 4 Tbsp Olive Oil 4 Tbsp Honey 3 Tbsp Lemon Juice 1/2 Tsp ground Ginger 1/4 Tsp Salt 1/8 Tsp Lemon-Pepper Drain Pineapple, reserving 4 Tbsp juice & set aside. Combine Pineapple, Cabbage, Carrot, Peppers & Apple in lg bowl. In lg. skillet put 2 Tsp Oil & saute salad ingredients (excluding fruits) for 4-5 mins. Keep veggies crisp -- Don't over cook! Meanwhile, in a jar, combine reserved Pineapple juice, Oil, Honey, Lemon juice, Ginger, Salt & Lemon-Pepper. Cover tightly & shake vy well to mix. Place salad ingredients back in lg bowl & pour dressing over all. Toss lightly to coat. Chill 5-6 hrs & toss once again prior to serving. I figure 1 serving = 1 cup @ 3 Pts.
