  1. This is my take on a Hungry Girl recipe! Cherry Cheese Danish 1 package RF crescent rolls 4oz FF cream cheese, at room temperature 1c cherry pie filling 1/4c oats 2 Tbsp Splenda 1 Tbsp vanilla coffee mate 1/4 tsp almond extract Preheat oven to 350. In medium bowl combine cream cheese, oats, Splenda, coffee mate, and almond extract. Stir until smooth. Fold in cherries and set aside. Spray a large baking sheet with cooking spray. Seperate crescent rolls into triangles. Spoon an equal amount of cherry mix onto middle of triangle. First fold the 2 end corners together. Then fold the middle corner up and firmly seal in cherry mix. Bake for 15 to 20 minutes. Serves 8 1 danish = 3.5 points
  2. "We just LOVE this for breakfast and snacks! It's good warm or cold. It's easy to wrap in wax paper and eat while you're on-the-move~ " I just made this vegan version, and it turned out great! Carol's Baked Oatmeal Servings: 4 large or 8 average Mix together: 1 cup oat bran 1 cup oatmeal, quick or instant (mine's "toasted" from Safeway) 1 1/2 tsp. baking powder (I like Rumford, or any non-aluminum brand) 1 tsp. baking soda Pinch of salt Blend together (an immersion blender works well): 1 banana 1 cup soymilk (I used Silk Original) 1/4 cup soy yogurt, plain (I used Nancy's) 1/2 cup applesauce, unsweetened (I use 1 pre-portioned container) 1 1/2 tsp. vanilla extract 1 tsp. cinammon 1 tsp. Pumpkin Pie spice (rounded) 1/2 tsp. nutmeg 1 Splenda packet (Optional: 1 TBS. of Whey Low or fructose to sweeten; you can taste the batter to determine if it is needed or not) Preheat oven to 350 degrees (mine's convection). Line 8X8" pan with Reynold's non-stick aluminum foil. (No spray required). Combine first set of dry ingredients. Blend second set of wet ingredients. Add wet ingredients to dry, stir, and scrape into pan quickly and put into preheated oven immediately. Cook for 30 minutes or longer, until top is golden brown and sides begin to pull away from the edge of the pan. Cool for a few minutes before turning out onto a cooling rack. Take off foil, then cool for 5 minutes. Cut into portions with serrated knife. Serve hot or cold (or "toasted"). Optional: You can add nuts and dried fruits, and count the points. .
  3. Hey, all. It's a tradition in my house that every Sunday, we have a pancake breakfast. I'm trying to find a points-friendly version I can whip up—no mixes please! So, what's your favourite? I am doing WW online and have found one recipe on the site (for pancakes with a raspberry sauce) but we weren't huge fans. It could have been how I made them. They were gummy which I know often is the result of overmixing, but I thought I was good about NOT overmixing today. I thought that I'd try something new next week. So, what's your favourite? Thanks!
  4. Here's my tried-and-true baked oatmeal. I think I just made it e-ven better! LOL! Here it is: "We just LOVE this for breakfast and snacks! It's good warm or cold. It's easy to wrap in wax paper and eat while you're on-the-move~ Carol's Core Baked Oatmeal Servings: 4 Mix together: 1 cup oat bran 1 cup oatmeal, quick or instant (mine's "toasted" from Safeway) 1 1/2 tsp. baking powder (I like Rumford, or any non-aluminum brand) 1 tsp. baking soda Pinch of salt Blend together: 1 egg [used 2 eggs] 1 cup FF evaporated milk (you can use skim milk, although I think FF evaporated is The Secret Ingredient! )[only had plain FF milk] 1/2 cup FF plain yogurt [replaced with FF ricotta cheese] 1/2 cup applesauce, unsweetened (I use the pre-portioned containers) 1 1/2 tsp. vanilla extract 1 tsp. cinammon 1 tsp. Pumpkin Pie spice (rounded) 1/2 tsp. nutmeg, (preferably freshly ground) 3 Splenda packets [ 2 Splenda packets + 1/8th C. fructose] Preheat oven to 350 degrees (mine's convection). Line 8X8" pan with Reynold's non-stick aluminum foil. (No spray required, then. For spray I like "Mazola: Canola and Sunflower Oil Spray") Combine first set of dry ingredients. Blend second set of wet ingredients. Add wet ingredients to dry, stir, and scrape into pan quickly and put into preheated oven immediately. Cook for 25 minutes or longer, until top is golden brown and sides begin to pull away from the edge of the pan. Cool for a few minutes before turning out onto a cooling rack. Divide into 4 servings. Serve hot or cold (or "toasted"). Optional: You can add nuts and dried fruits (i.e. raisins or craisins), and count the additional points. [For Flex: Points for 1 serving baked oatmeal: 4.4 w/ FF evaporated milk; 3.9 w/skim or 1% milk~ pointed for me by Paris~ Thanks, Paris.] " ---------------------- This tastes like COFFEE CAKE?!!! I haven't made it in awhile. Have my tastebuds changed again?! .
  5. Not sure if this is a good place to post this, but I thought putting together a master list of meal ideas could be a good idea. We're starting a weightloss challenge at work and thought it would be cool to bring in lists of ideas separated by points. Not general ideas though, but what you actually eat, such as: 2 POINTS WW Yogurt with 1/2 Cup Kashi Cereal 3 POINTS 1/2 Cup Oatmeal with 2 TBS PB2 1/2 Cup Oatmeal with 1/2 Cup Blueberries and Splenda Please Continue On!!!
  6. I've been having a WEIRD breakfast after exercise. Here it is: Small-diced pickled egg 2 TBS. Toby's Tofu pate (tastes like egg salad) 1 tsp. olive oil 1/2 C. shredded celery and carrots 2 broken WASA breads (used like croutons, 1 WAP) Shake of True Lime powder Salt Protein, fiber, veggies, 1 oil...and it's delicious and nutritious! Any other weird-o comb-os?...
